    Everything to like :D I'm getting the hang of mine a bit more now. The fruit loaf is out and looking promising. I'm waiting for it to cool to get the cauli cheese in, then before bed I'm going to get peach porridge going, overnight. Thanks Pooky for refreshing my memory on how to do it.

    Hi NURSEMAGGIE Pheasant is like chicken used to be when it was reared free range, nice strongish flavour, venison is a dark and flavourful meat but needs slow cooking to make it tender so a nice casserole of diced venison with some wine in the gravy would be super. Pigeon I like but it's not everyones cup of tea and the only meat is on the breast of the bird so not worth buying whole ones. Wild Boar is delicious but very expensive. Hare is sometimes quite cheap but I find too gamey for my palate. Rabbit is my favourite wild meat and you can get whole rabbits for under £5 down here. Get the butcher to portion it for you and do it in a casserole with bacon, mushrooms,onion,celery, red/white wine and something like redcurrant jelly and mushroom ketchup to give it some zing. It's bony meat but I usually cook it the day before I want it, leave it to cool and then take out all the bones and reheat the rabbit meat in the sauce the next day. It makes a really nice pie too using that method which would be very nice for a Christmas Day meal. Serve it with the usual roast potatoes, something nice and green like sprouts or savoy cabbage and parsnips if you like them and some sort of stuffing ( make balls of stuffing to go in a pie), Yummy!!! Little birds like quail or partridge are not worth the fiddle but taste lovely. The other thing you might like would be a nice piece of salmon, there are many ways of making that into delicious celebration food too. Hope that helps, Lyn xxx.

    Nurse Maggie I often serve salmon as a turkey alternative if we have none turkey eating guests. It's often on offer before Christmas as well. It works well cold afterwards and you can use up the bits in quiche etc.

    I think someone has added a couple of hours into my day as it's only just gone five, dinner is cooked, kids are showered, packed lunches are prepared, washing all done and bags packed ready for tomorrow. Usually it would be 8pm and I would be flapping that everything wasn't done.

    Thanks Mrs LW. looks like it is chicken then Ds wont eat casseroles he just eats the meat. I end up with too many vegetables. I can't have wine because of my cancer treatment it sort of cancels it out and makes me very sick. I don't want to fiddle around with bones I will just have to look for something different to do with it. Today we are having roast chicken for the fourth week running. Neither of us is that keen on salmon but I may look for some nice fish for boxing day or even Christmas eve may be better as the market won't be open on Christmas Eve unless they open specially.

    I am lucky there is a game and poultry stall, a game and fish stall, Two or three fishmongers, one that is fish and a butchers and three just butchers. Fruit and veg are similar sorts of numbers.

    People moan about Bolton Market but mainly because the council sold of the old Market Hall for a shopping centre and the replacement is not a good building or as good they say. I think it is wonderful having been without a decent market for nearly 20 years.

    The acoustics are bad I come out with my ears buzzing from the stall holders shouting and can't hear people saying excuse me in Ald! it is not far from the market. My fault I know going for the last hour but I do get some bargains.

    I'm looking for a nice, light, christmas-type cake that's easy to make and not heavy on sugar.. anybody got anything foolproof?

  • Does it have to be a fruit cake? I've got umpteem variations on the traditional cake including a light fruit one that has things like glace pineapple in it and I've got a lovely one that uses pureed prunes instead of fat or a vegan one that is VERY healthy bearing in mind that it IS still cake!!

    I will look one up mar I used to have a really nice boiled fruit one you could cut the sugar right back in it. I once forgot the egg and it turned out quite nice without it.

    Mardatha I made the lemon curd cake using a jar of mincemeat last week and that turned out light and fresh. Was lovely, I served it as a trial to my auty support group and they loved it.

    Sheila we are in a really low crime part of town, and I think it's more a malicious thing. I think fitting the cctv will be enough to put them off.
