PIC well done on the veg, looks delicious. We often find a courgette that has gotten away from us and turned into a marrow and this is my stuffing recipe and method.
Cut the courgette in halves, scoop out the seedy bit to leave a shell about 1/2 an inch thick. Sprinkle it with salt and turn it upside down on a baking tray and leave it for an hour, this will get some of the moisture out of the shell and make a better texture for stuffing.
4 oz of fresh breadcrumbs
4 oz of mature cheddar cheese grated
2 tablespoons parmesan cheese grated
1 teaspoon dry mustard
1 large onion peeled and diced
1 tablespoonful of vegetable oil
2 tablespoons of fresh chopped parsley
1 egg beaten
a pinch of cayenne pepper
salt and fresh black pepper to taste
Fry the onion in the oil until lightly golden. Combine all the ingredients in a big bowl and mix well, divide in half and push into both halves of the drained and rinsed courgette (dried with kitchen towel) sprinkle it with a bit more cheese and pop into the oven 1t 160deg Fan/180def Conventional oven/375 deg Electric for 30 minutes or until the courgette is cooked and the filling is golden and cooked through.
It's nice and savoury and you can add in anything else you fancy, chopped mushrooms fried in butter are nice!0 -

My HG veg will keep a miniature wolf from the door , as long as he's on a diet :rotfl: but it's my first year of veg growing in containers so happy with the result..

Loving the pics of veggies, such a lovely feeling harvesting them. Just think every bowl full saves about £1 and tastes much better than shop bought.
Am so proud of my DD, took her to 3 stores to pick up things she had ordered and she spent ....22p! All the rest was vouchers and points earned. She got 2 cucumber pillows from A*gos - apparently they keep cool. Both her and her fella hate hot pillows and needed new ones so bargain. She also got 10 pots of play doh, 6 pairs of next size undies for Dgs and 2 dvd's. Someone chucked a big bag of ps something or other games in her wheelie bin and she traded them in for the DVd's. The biggest expense of the day was £1.30 for the car park but we took snacks and drinks with us. Dontcha just love being O/S ?Clearing the junk to travel light

PIC - what a lovely haul of veggies. My dad won't eat courgettes as they are a bit new-fangled and modern for his taste, so I just let my courgettes grow quite big and tell him they are baby marrows which he eats and thoroughly enjoys!0

Hi all, sq I tried to rest but I remembered something and that was that!!
tomorrow is aldi voucher day so I need to be about early. and I need to buy a paper or 2. I have the day off so I will be painting a shelf unit to go in my bedroom to display my handbags etc on.... Already have the paint so a free exercise.
Love the fresh veg pictures, I am lucky as in our village there are a few roadside sellers so cheap to buy.
