OP - if you're seriously that worried, don't go. Maybe see someone professional about your fear.
And for your information, there are many blonde Turkish people in Turkey, it's a modern developed country, it's more-or-less in Europe and your attitude is frankly a bit offensive in my opinion.
Now I'm off to plan my trip as a blondish disabled woman travelling alone one way to Nepal - I feel a good sight safer there than here - and returning with my husband later in the summer after he's been on a longer trip to see family.

Of course it's irrational.
Firstly, with the exception of two well known cases, in very particular circumstances, millions of children are taken abroad to Turkey and far more 'dangerous' places every summer, they all manage to come home without being abducted.
Secondly, their blondness, really? You really think they are more at risk because they are blonde? They're not the only blonde children out there and you might think they're stunningly beautifully blonde but to everyone else they're just children. An abductor will take any child that is easily accessible, not any blonde child whose parents are nearby.
If you really believe they're more at risk because of their hair colour take them to Scandinavia. They won't be any safer but you won't be as paranoid.

Is it ONLY Turkey you have this fear with, or holidays in general?
If it is only Turkey, then pick somewhere else. Not Egypt either if you have these worries though!
If its holidays in general, then you have to work out what the real issue is. The language barrier? Culture differences?
Perhaps a holiday in the UK is better then? There are many, many stunning places to go here and things to do. You could go on a road trip along a particular section of the UK. The kids don't lose out on a holiday then.0
