    Carrot and sweet potato soup.

Finely chop 2 onions. Peel and thinly slice 8 large carrots and 2 medium sweet potatoes (I used one and some lentils as I found 2 pots too sweet). Put onions ina pan with a little olive oil on low heat. Gently soften for about 5 mins. Add 1 pt chicken or vegetable stock, the carrots and pots (and lentils if using). Simmer on low heat for approx 30-45 mins. Don't let mixture boil - you may need to add a little extra water. Remove from heat. Liquidise mixture. Freeze what you don't use.

I eat sweet potatoes sweet! Cut them in cubes, boil them in a bit of water till soft, drain and then add sweetend coconut milk to them.

Or if they are roasted sometimes I add sugar on top as a sweet

I serve sweet potato mashed. I season it with butter, pepper and a sprinkle of cajun spice.

I put big chunks of carrots, parsnip and butternut squash in a baking tray. Drizzle with honey and roast.

Sweet potato mash, butter salt and pepper and nutmeg or roasted like normal potatoes.

Carrots I steam and then throw in a splash of orange juice towards the end some butter and black pepper.

I love sweet potato, normally just cut into chunks and then roast with the normal potatoes without boiling as they cook quicker than normal spuds. Delicious!

You could make sweet potato wedges, sprinkle with nutmeg. cinnamon may not complement your roast dinner. have fun!

My favourite way for carrots is to use a peeler to cut strips, lightly steam these in about half an inch of water then when all the water is gone - only about 3 mins or so, switch off the heat and put in a knob of butter (or what passes for) and a scant half teaspoon of sugar. Leave for a few more minutes - while sorting the gravey maybe - then serve.

It is a bit fiddly but can be stripped several hours before or even the day before and kept in the fridge.

I love sweet potato mashed or cooked with ordinary potatoes and mashed in.
but if i am doing a sunday roast then i like the sweet potato roasted.
my carrots i boil as normal but add about a half teaspoon of sugar to the salted water - you can reduce the salt a bit if you do this, then towards the end of cooking add a small knob of butter. i add pepper at the table as not everyone likes it.
