I've gone bonkers and bought loads of sweet potatoes - what can I do with them other than baking/mashing?

They are nice for bases of soup... or I cut them into circles and drizzle with oil and roast -they go all chewy -and if left a bit longer -all crispy, then drizzle with balsamic mmmmm
and if you are growing veggies you can start one off to grow slips to grow your own :T-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
They are very nice in soups. Also boiled and served with steamed or fried fish.You are 48% tight

I like them just tossed in oil and roasted. There's an earlier thread with lots more suggestions so I've added your post to it to keep the suggestions together.

I roast them with parsnips and freshly grated nutmeg for the Sunday dinner.
I also make wedges with them.
The BBC site has about 5 pages of recipes for sweet potatoes, including some deserts!

I love sweet potato cut into wedges, drizzled with oil and soy sauce and cooked for 35-40 mins. Yum!
Another suggestion was baking as a whole potato for 40 minutes, then cutting in half and scooping out the middle bit. I fried that with spring onions, garlic powder and bacon, and mixed in a little grated cheese. Put it back in the skins, and covered with more grated cheese and a splash of soy, and back in the oven for 10 minutes. Very yummy if you've got plenty of time.0 -

Tried this at a friends house ages ago ... I can find recipes for just sweet pot & squash soup ... but none that use coconut milk/cream ... and it was the coconut that made it scrummy

Its only sweet potatoes and is enrichened with the coconut. Adding Butternut Squash at the beginning should work though?
I also occasionally leave out the lemon grass, as some dont like the flavour it adds, its still lovely.

Not sure about yellow pepper sauce, i will just add a bit of yellow pepper, it going to be blended any way.
