    oooh, I love making sweet potato crisps...

    Using a potato peeler make thin strips from the SP (you could use a mandolin, you basically want really thin slices!)

    Spritz with olive oil and sprinkle with salt. Then lay them out on a baking tray and put in a hot oven for about 5 mins. They still seem slightly bendy when they come out but they crisp up quite quickly.

    So tasty!!!

    sweet potato and butternut squash soup by nigella from her express series is excellent

    Nigella's also uses sweet potato with her pousins, cooking time is same for them both in oven, also from her express book and series :T

    For a different sweet potato mash, add a teaspoon (or more if you like it) of wholegrain mustard and a tablespoon of double cream - mix in and its delicious!!

    i can vouch for that soup! though i use cumin instead of cinnamon but that's just my personal taste for cinnamon only in sweet things!

  • Does anyone have some good vegetarian sweet potato recipes that can be frozen?

  • sweet potato wedges are nice.............slice sweet pots in to wedges and put in a bowl a couple of tablespoons oil some herbs chilli powder and mix in wedges spread on oven sheet and bake gas 5 for about 40 mins..........im not sure at which stage u would freeze........probably after mixing

    you can freeze SP mash - someone on here uses an ice cream scoop to shape it - freezes it on a trap then puts in freezer bags so it takes up less room.

    Perhpas parboil the SP wedges and then freeze, ready to be popped in the oven for 20-30mins straight out of the freezer????

    SP soup is lovely - chop up and saute for 2-3 min with a chopped onion. add some veg stock and simmer for 20 mins or so. Blitz and thin with more stock if needed. this freezes very well :D
