Mozzarella - 2 pks should have been used by yesterday - Help !

Quesadillas.....flour or corn tortilla/wraps, a splash of any sauce you have ( I like to use sweet chilli dipping sauce), sprinkle the cheese and any other left over bits from fridge (we usually use peppers, tomatoes, onions, spring onions etc any cooked meats) try out different combos. Then top with a 2nd tortilla - fry in a lightly oiled non-stick frying pan for couple of minutes each side until tortilla starts turning golden and cheese melts.0

I second this, chicken, bacon and mozarella is lovely with a BBQ sauce, have done it using chicken breast, chopped up roast chicken leftovers and even frozen Birdseye Southern Fried chicken in breadcrumbs or the plain Chargrills, soooo nice with a jacket potato.
If you've still got loads to use up and fancy a snack you could try making these - Parmesan & Poppy Seed Lollipops - but sub the parmesan for mozarella, am sure it would still work and be yummy!Pax Et Bonum0 -
Nigella made a lovely thing with mozarella on Nigella Bites - she called it mozarella in carrozza(sp) - it was two slices of white bread sandwiched together with loads of mozarella and then firmly stuck down all round - she used cheap white sliced as she said it stuck better. Then she soaked the sandwich in beaten egg and fried it and had it with tomato ketchup - looked lovely!Jane

Interesting that some folks suggested quesilladas. A similar but EXTREMELY more yummy thing, is Staffordshire Oatcakes. For those who have never tried them, they look like pancakes, are soft and moist, and a traditional staple in the Potteries area- the GOOD NEWS is that Tesco do them very reasonable - not quite as good as hot from the corner oatcake shop, but worth a try if you fancy something good and different. Treat them like pancakes, fill with anything, but any cheese is good, especially mozzarella - can add any cooked meat -sausage/ham/bacon rasher, sliced tomato is good too. 2 minutes in microwave time to melt cheese. Gorgeous grub.0
