    I'm just bumping this thread a little rather than starting a new one, I've found what can only be described as a SLAB of mozzarella cheese in the fridge I forgot I'd bought, use by date is somewhere in April, beginning of I think, it's huge, so on the hunt for yummy recipes.

    Also does anyone know how pizza hut make that pizza with the little cheese bits around the edges? Because that looks lovely :D

    Hi Frugal. Mozzarella is actually the original cheese used for pizzas. So you'll have plenty to use there.

    Also why not make vegetable and mozzarella bakes? Just layer all sorts of part-cooked veg, any kind of tomato sauce (can be HM or from a jar - pizza sauce goes really well with this) and plenty of mozzarella, repeat until you reach the top, finishing off with the cheese of course. Bake and eat with warm toast - delicious!

    Make basic pancakes then fill with sliced mozarella and ham.Bake for 5-10 minutes in the oven till the cheese melts.Kids love them and it uses up leftovers, in my case eggs and sliced ham.

    I've had a go at making the pizza hut-esque pizzas. What I did was roll the pizza base out larger than needed, then cut little snips all the way round (as if you were lining a cake tin or cooking a gammon steak) placed a bit of cheese in each snippet and folded over - then made the rest of the pizza like normal - not quite the same - but similar ;)

    aubergine and mozzarella bake - grill(or microwave!) slices of aubergine until tender (I don't bother with oil and it's never been a problem) then layer the slices with tomato sauce and the sliced mozzarella - should end up with 2 layers finishing with mozarella on top. Sprinkle with a bit of parmesan and bake for about 20 minutes. Gorgeous!

    That's what I based my "veg and mozzarella bake" on. I eat this all the time, hubby doesn't like aubergines so it's all for me! :D

  • I half-cook some pasta and put it in a oven bake dish with mushrooms, peppers, onions, celery and whatever else you have to hand- (I make a chilli, garlic, basil and tomato sauce in advance) which I then add to the dish until everything is covered in the sauce- then smother with mozzerella and bake for half an hour!! Gorgeous!!

    IVe got some of this left in fridge and im not quit sure what i could do with it ? im not a big cheese preson i dont mind it in recipes etc but dont eat chuncks of it any ideas ?
