salad season here so mostly living on that and new potatoes, double cook one day and have them sliced and fried with the nxt days salad seems to be working well and keeping everyone happy (except youngest who would happily live on noodles) have managed to persuade him that he now loves raw garden peas so hes getting most of his 5 a day necking loads of them as he claims to hate salad. will also eat raw carrot and fruit so were getting there.
had to buy milk yesterday as it was all frozen but hoping for an NSD todaySPC~12 ot 124

WantToBeSE wrote: »I made a really easy and delicious carrot cake the other day, and shared them with a friend. Really simple.
They are cupcakes, not a whole cake:
150g grated carrots
2 medium eggs
100g soft brown sugar
5 tbsp sunflower oil
100g self raising flour
1/2 tsp ground cinnamon
100g any dried fruits eg: raisins, chopped apricots, glace cherries ( i used a combo of all of those).
Heat oven to 190 C/gas 5.
Put muffin cases into a muffin pan.
Mix eggs and sugar, beat in oil.
Add dry ingredients and mix.
Spoon into muffin cases, bake for 15-20 mins until firm to the touch and golden brown.
They were delicious!

3 Netmums like this
Bread puddingThis recipe for bread pudding is really cheap to make and is a good way to use up old bread. Don't confuse it with bread and butter pudding though!
8 oz/225 g stale (day old) bread, broken up into smallish pieces
1/2 pt/300ml cold water
3 oz/75g soft brown sugar
1 egg (beaten)
2 oz/50g currants
2 oz/50g raisins
1/4 pt/150ml milk
1/4 tsp mixed spice
Put the bread in a bowl and add the cold water.
Allow to soak for 1 hr.
Drain the bread and squeeze out any excess water (using your hands!)
Mix the bread with the rest of the ingredients.
Pour into a greased 8" square baking tin
Cook at 180C/gas 4 for 1 1/4 - 1 1/2 hours until firm to the touch and brown on top.
Allow to cool for 30 mins or so in the tin, before cutting into squares.
Serve warm or cold.
Variation: use any combination of dried fruit eg: cranberries, cherries, apricots etc
Hi Elsiepac, there are lots of recipes for bread pudding but I like this one from NetMums. Will sort out one for bread and butter pudding later for you as have to go out now.
That recipe looks really good and easy too. Will be giving it a go soon. Always have left over bread. Thanks:)MFW 142- Oct 1999 £55,0000, Jul 2013 £27,593.17 Oct 2013 £26,531, Dec 2014 £22,600, Dec 2015 £20,190, Jan 2016 £19,944.19 Mar 2017 £16,944.76 Decluttered 207/2018

Another small spend in Mr T today, bought creme fraiche, pasta bows, double cream, small tiger baton and zip lock bags total £4.50 and DH bought a pot of Ricotta cheese in co*p last night for £1.40. Have updated sig. Not gonna make it under budget this month, but aim to keep it as low as possible.
I was wondering if any of you lovely peeps have tried A*di wines and could recommend any? I tend to like dry whites, my favourite is Blossom Hill california white so any that taste as good as that would be a bonus.MFW 142- Oct 1999 £55,0000, Jul 2013 £27,593.17 Oct 2013 £26,531, Dec 2014 £22,600, Dec 2015 £20,190, Jan 2016 £19,944.19 Mar 2017 £16,944.76 Decluttered 207/2018
