    Any ideas for using up butternut squash? Only me who likes it really, half is ear marked for a spicy biriyani style bake but don't want to waste the rest!
    I love butternut squash soup- fry off some chopped onions and red pepper, add your butternut squash, add some water and chicken stock cube, salt and black pepper, cook until soft and blend it.
    Another way I like to use bs is to just roast it with plenty of garlic and some salt and black pepper and serve it with chicken and mashed potatoes- yum.

    Hubby is away to Mr T with kids to get lemon curd. I just made some doughnuts and realised I have no filling to put inside- good that Mr T is very, very close :D

    Had a slight post-pay-day splurge over the weekend, spending £20 out of my £75 budget, with a few treats in there. Pretty happy the food I have will see me most of the way to the end of the month, though obviously I'll need bread and veg. Unfortunately I wound up really sick today, and I went to buy some juice, mints and easy-to-digest snacks to help calm my stomach down a little bit, which now takes me up to £25, only 4 days into the month!

    I'll need to assess whether I need a bit more money later in the month, but for now, I think I might struggle a little bit. At least if my stomach is upset, I won't want to eat proper food for a few days, and pasta is very cheap!

    If you add 100mg low fat Philly to the soup when you blend this recipe , it is quite delicious. It's a WW recipe so not too high calorie

    Small spend today on onions, tomatoes, rolls and lemonade which came to £4.53
    Used the last of some soup up for lunch with crackers, cheese & lettuce and tonight we had hm burgers & salad. These were made with pork mince, onion, apple, carrot and chilli. Not a huge fan of burgers but these were lovely and moist, also did my own version of cucumber pickled salad using soy sauce, white wine vinegar, sugar, balsamic and chopped mint. Delicious.

    Would love to joing this challenge as food budget has been non existant until recently. Am now trying a budget of £40 a week (for 3 of us) and paying by cash - no more credit cards.

    2 NSDs in a row with nothing spent at work either :D

    I made enchiladas from scratch for tea last night and they were fabulous, tasted just like the el pas0 ones:D took the leftovers to work for lunch and so did DH. Will definitely make these again even if the GF wraps are a £1 each:eek:

    Not sure what is for tea tomorrow night as I have the last college class of my 2 year course which may involve a drink in the pub afterwards so I will be late in. May have to resort to a chippy tea on the way back.:o

    I have been making an effort with our lunches this week, making different things and doing some prep on an evening and have enjoyed them much more which has stopped me wasting money on food at work.

    Day 22 - pizza - cooked from freezer + jacket potato + baked beans - MW. :(
    Men out of my kitchen now - but - so much dust + odd blobs of paint - from the rubbing down of plaster/painting walls and ceiling etc. I am working my way round the kitchen doing the cleaning.
    I have turned on the new ovens as per instructions - 1 hour to burn off packaging smells.
    Then I have new appliances to unpack and clean before using.
    Tomorrow - I lose my bathroom. :eek:

    It really sounds delish (I imagine it would make soup nice and creamy- yummy) but unfortunately will not be able to try it as DD and I are both lactose intolerant :(
