Have you thought about trying kedgeree with he salmon, and using quails eggs to make it more special? I have a recipe somewhere, think it is a Nigella or maybe Waitrose...anyway its dead easy, onion, curry powder or spices, basmati rice, pre-poached flaked salmon, hard boiled eggs (halves if quail, quarters or sixths if hens). It looks really pretty and Spring-like servedin a big dish especially with finely chopped parsley sprinkled over it.

Evening everyone
Snow stopped falling this morning and has now nearly all disappeared! Yay!
We generally have a roast on a Sunday when we're at home - but we are away alot of weekends in the caravan so don't cook a roast then. We tend to take/buy nice meat/fish and have a special meal on a Saturday night whilst we're away. Very often DH cooks on the bbq - it's a good gas one, we bought a big non-stick pan that cooks food very nicely, so very often cook something on that. We have potatoes, rice, pasta, salad to accompany it, it does depend on what we have and also depends where we are. We very often go to the coast and so if possible I go to a fish shack - most of the fish is locally caught - not cheap - but absolutely beautiful. Last year we bought a lobster and some other fish and the guy was listening to the girl telling me how to get the meat out of the lobster and he asked if we were trying different things we hadn't had before and when I said "yes" he gave me a bag and said "this is what we're famous for - try this". When we got back to the caravan and I portioned up the food for lunch - he'd given me a bag of smoked salmon - it was out of this world - so delicious. So we go there to buy nice fish - they always are willing to give advice too on how to cook, what to serve with it etc. Fish is also delicious cooked on the bbq - sometimes I put it in tin foil or just lay it on top of a veg stir fry so it steams.
Our roast chicken was delicious at lunchtime, really seem to have got to grips with not over cooking the meat so it's not all dry and rubbery. Have now started using a meat thermometer - seems to be working well.
Just going to spend some time chilling tonight. Have invited the outlaws for lunch next Sunday - thinking I will do a leg of lamb - they live quite frugally (sp? they don't really need too!) so don't buy it - but as it's Easter Sunday will be nice to have good lunch and a couple of bottles of wine. FIL did help me out with taking me to the garage to collect DH's car on Friday and generally if I need assistance and ask them they do help me out. Although MIL can be a bit of witch at times, she's very selfish and DH and I are not happy at all with her, as her father (DH's grandfather) is still alive and lives near the coast approx 30-40 mins away and she hasn't been near him since October 2011 - as she's not happy that another relative died and MIl thought she was going to get some inheritance and grandad got the money!

Hi all
We have a roast dinner every Sunday - we alternate Sunday lunch with the Outlaws so I actually only have to cook one every other week. Also, Sunday wouldn't be Sunday without a proper Sunday tea (buffet) - sandwiches, hm cake, hm sausage rolls, crisps, sometimes chicken drumsticks, sometimes hm scones. Sunday is definitely a kitchen day in our home!Lightbulb moment: -£9,954.31 Current Debt: £0

PenPin - lovely to see you posting! Great to hear of DD and how she is doing as well.
Keep warm folks - have been looking at the scenes on News. We have no snow in Edinburgh, have hardly had any at all this winter. Oh - we did have some one Monday - last Mon maybe? It does seem strange that there has been so much snow further south.
Had Sunday lunch round at DD and her OH which was delicious.

nmlcI'm allergic to fish, but have only had the allergy for the past 15 years. It makes me so sad when I read about all the lovely fish people eat.
I've just eaten my roast dinner, I made the roast potatoes from the old potatoes I froze last week. I just dropped them into the hot lard straight from frozen. The family said they were the nicest roasties they'd had for a long time. Brilliant stuff, no more wasted potatoes.0 -
Good to 'see' you Pen-Pin, glad your business venture is going well and DD is doing so well.
Don't often have a Sunday Roast here but try to do something a bit different if I can. Today it was lamb shanks. I haven't had lamb for about 20 years and now I know why, I don't like it!! The mash and tomato and veg sauce was good though.
DD is in the kitchen baking, not sure what's brought this on but she makes one hell of a mess!! Cupcakes look good and chocolate cake smells lovely, hope she's going to share!

Very late to-night, have spent most of the evening searching for a pattern that I KNOW I have and promised to lend somebody....can I find it...NO!
PP...lovely to see you posting, good to hear that DD is doing so well.
Still extremely cold here, an old house lets in all sorts of drafts, no snow thankfully.
Up early for me, cooked pancakes and bacon and stewed the first of the rhubarb to go with them....was lovely. Went for a swim with DD4 and DGS2 around 1 as I find the pool is almost empty at that time, OH had cooked dinner when I got back....ham, cabbage, carrots and spuds, followed by one of the muffins I made while breakfast was cooking. Finished the last of jackets for triplets and will get them off during the week....they are way too big for them yet but imagine that they have lots of small clothes.
Halight...please see a doctor, meds shouldn't be causing you so much pain.
We no longer have a roast every Sunday, as it is usually only the 2 of us, but usually have one during the week when DD4 and DGS2 eat with us...I would have guests every day as it gives me an excuse to cook something 'nice', once OH has had a big breakfast he doesn't care what, if anything he eats for the rest of the day....drives me mad as I hate to cook just for me.
