    I've not made a frittata for about 3 years.... mine are typically basic, so just: slice/fry par-boiled spuds and sliced onions, lob in some peas and/or sliced peppers, lob in the eggs and cheese.


    Always served with baked beans.

    Next bit's a compromise/tricky as I've not got a grill usually, or it'd be too much of a faff to try to get the frying pan under one.... so I try to poke the cheese into the eggy bits.... then, I'll slide it off onto a plate and flip it back into the pan.... just long enough for the egg to set/colour, without the cheese being a problem/mess.

    Always served with baked beans.

    My mother's included some spuds, spinach, parsley, tomatoes, green beans, asparagus, leeks, onion, garlic, corgettes and some other things I might have forgotten.

    She says it's harndy because you can chuck in any veg you happen to have to hand.

    We didn't have any baked beans, but did have some broccoli.

    And, apparently, it was a mixture of normal eggs and some duck eggs.

    i'm back from a weekend away! was relaxed until I read the letter the hospital sent me.

    Anyways, what did I miss? Will be popping to allotment for a big day tomorrow.

    I've got a small frying pan to make mine in - as there's only me. It is probably about 9-10" wide.... that lot'd never fit in it :) One fry-up makes four portions really .... except I am a pig so will eat two straight away.

    Don't take it personally, if Generali stubs his toe when he returns he'll be cross-questioned too (as he should be.... he probably qualifies as a health tourist the little immigrant).

    They're just having to double check everybody, not just you, as it's been discovered there's been widespread abuse, so they now have boxes to actually tick, instead of pretending to tick them.
