    HOT PINEAPPLE PUDDING.

    Tin of pineapple
    2oz flour
    2oz marg
    2oz sugar
    1/2 pint milk
    2 eggs, separated
    3oz caster sugar (for meringue top)

    Make white sauce with flour,marg,milk and sugar. Mix egg yolks with the juice from the pineapple then add to the white sauce. Boil up and keep stirring till the mix thickens, then add in the pineapple pieces. Put this in an ovenproof dish and set aside. In another bowl,whisk the egg whites till light and fluffy then add the sugar.Spread this over the custard mixture in the dish and put in the oven to brown the meringue. About 180 deg for 15 -20 mins.

  • With one tin I would definately make homemade ham and pineapple pizzas, but that's just becuase it's one of my fave meals!

    Defo sweet and sour and pizza.
    I also used tinned pineapple for the kids fruit snack for school (any tinned fruit in a plastic tub goes down well-I gave them value fruit salad in a tub with a spoon once and they were so excited ha ha.).

    In toasted sandwiches with cheese and ham.
    In the smoothie maker with whatever slightly overripe fruit I have.
    in basic curry powder type curries-if you're feeling retro!

    It's one of those things I always have in the cupboard.
  • Hummingbird cake is lush, but you might need a few extra ingredients. This one is actually next on my list to bake. Pineapple upside down cake (typically made with rings, but chunks would still be good) as already suggested is really nice too.

    Haha, I do the same for DH. It's his favourite part of lunch. ;)

    I put in a pan with the juice, add a good spoonful of cinnamon, and bring to boil. Simmer for 15 mins or so and serve with ice cream :)

    I love pineapple on my pizza but my OH hates it too lol I usually make a batch of 'me' size ones and freeze them so the tin doesn't go to waste.
    I'm fancying one now and have none made up..job for tomorrow then!:D
  • Another vote for pineapple upside down pudding. Can't beat a good pudding :)

    Pineapple is a great addition to a fruitpot, easily transportable for a filling work luch. I like it with oranges and grapes, and chop a banana into it at the last minute.

  • These, imho, are the best Carrot Cakes ever, I would even go so far as to say they are better than chocolate cake, and I'm deffo more of a chocolate cake kinda girl!!

    The recipe uses crushed pineapple, but if I have chunks I just whizz 'em in the food processor.
