Freeze it if you get pineapple overdose. I usually freeze it in chunks then reuse in sweet and sour etc.All shall be well, and all shall be well, and all manner of things shall be well.

An old weight watchers recipe from a mate a few years ago. if it is too vague for you, let me know.
Mild curry powder tablespoon
2 teaspoons ish of tomato sauce
Mix pinapple juice with corn flour
Peppers
Onions
Pinapple
Chicken stock with 1/2 a cube
Chicken or pork
Banana just before the end

I have in the cupboard two tins of chopped pineapple pieces use by end of March 2012, what can i do with them?
looking for a tried and tested recipe thats nice, baking or meal recipes????

Sweet and sour pork or chicken, soz I dont have a recipie to hand but when doing a slimming world recipie once I had to use them.
You could always knock up a vat of just the sace, then seperate and freeze at a later date maybe?0 -
Sweet and sour chicken
· 450g chicken fillet, cut into chunks
· 1-2 tbsp cornflour
· 1 red pepper, cubed
· 1 green pepper, cubed
· Carrott sliced
· 6 spring onions, sliced diagonally
· 425g can Pineapple Chunks in Juice
· 2 long, red chilies, sliced diagonally
For the sweet and sour sauce:
· pineapple juice reserved from the can
· 1 tbsp tomato ketchup*
· 1 tbsp brown sugar*
· 2 tbsp light, reduced-salt soy sauce*
· 2 tbsp white wine vinegar*
· 2 tbsp dry sherry
Method
1. Marinade the chicken in the cornflour
2. Add some oil to a pan and fry the meat, then when cooked add the vegetables and pineapple and chilies.
3. Mix the sauce ingredients together and pour over the pork and veg. Cook until the sauce thickens slightly and the chicken is cooked through
i don't cornflour the chicken, just cook it with the veg then add the sauce. one of my favorite recipes.Opinion on everything, knowledge of nothing.0 -
If its pineapple chunks I would do pineapple upside down cake, base line a cake tin, put in a layer of the drained pineapple, drizzle over a couple of tblsp of syrup. Top with a basic sponge mix then bake.
If its crushed pineapple - I have in the past drained it and made a super-sticky carrot cake with it. I found the recipe either on this forum or on the BBC Good Food website.Jan - June Grocery spends = £531.61

pineapple chunks sorry lol, i ahve a basic sponge mix in the cupboard il do this tomorrow using one of the tins, as im doing a homemade pizza for dinner, but oh hates pineapple on pizza lol
