Just to add that the best before date on tins just means that after this date it is still safe to eat, just might lose taste/texture slightly. Unless the tin is going rusty, there's no problem with hanging on to it and using it past the best before date.All shall be well, and all shall be well, and all manner of things shall be well.

Hi, my suggestion would be the following recipe which I was given by a work colleague approx. 20 years ago. Don't dismiss it if you're not a great fan of pineapple as you can't taste or see the pineapple in the finished cake, it kind of "melts" into the mixture and the purpose of putting it in is to give a nice moist fruit cake which keeps well but I can't vouch for this as in all the years I've been making it it's always been eaten within a couple of days!
6 oz soft brown sugar (dark or light)
4 oz butter
12 oz dried mixed fruit
4 oz glace cherries, halved
(if you don't like cherries omit and put in an extra quarter pound of dried mixed fruit)
8 oz self raising flour
2 eggs
tin crushed pineapple (drained) or chunks mashed up with a fork!
Melt butter and sugar in a large saucepan.
Remove from heat and allow to cool.
Add remaining ingredients to melted butter and sugar in saucepan and mix well.
Pour into baking tin (I've always used a 2 lb loaf tin but you could split into 2 x 1 lb loaf tins I suppose).
Cook at gas mark 4 (180 C) for approx 90mins.
It's lovely and moist and would probably be suitable as a "light" alternative to a Christmas or celebration cake.0 -

I agree, I would just use them when I got round to it as well - but if it really bugs you and you don't want to use it all up right now, open the tins, pour the contents into plastic boxes and freeze. Should be ok for another few months even for the most nervous

This one of my favourite recipes that uses pineapple.
Tropical Pork and Peppers (GF & DF)
Dice a 600-700gm pack of pork loin chops and put it in a bowl. Put 2 tsps chili powder on (or to taste) and toss it to coat the pork.
Put 500g of rice on to cook
Heat some olive oil in a big pan over a medium heat. Add 1 large, finely sliced onion. Fry until soft. Add the pork and cook until it begins to brown.
Put the juice of a large tin of pinapple chunks in the pan and a tsp of coriander leaves with the pork and simmer for 10mins.
Add a 500gm pack of frozen peppers and the pineapple chunks to the pan and continue to cook for another 5-10 mins until the pork is cooked.

My favourite use for tinned pineapple is to bung it in a curry - juice and all. Any curry, but works best with veggy (sweet potato or butternut squash) or chicken.

I'm pretty sure this is the recipe my Mum used to make. I made it once myself as a teenager and it was successful. It is as unhealthy as anything and is tooth-achingly sweet, but I thought it was absolutely delicious!

sometimes I put tinned pineapple in a chicken curry...yes I know it sounds horrid but it tastes yum - even DH who doesn't like fruit in savoury dishes likes it. discovered it on holiday when we were trying to use stuff up!weaving through the chaos...0

oh please give me some ideas... I have two tins of pineapple chunks & no idea what to do with them other than to serve with cream or evaporated milk
I know they can't be added to jelly so that's out
