The squash didn't cook, so I put the pieces in the oven as it was still warm.

I started off with carrots and was going to add more veg, but the carrots burnt so i added tinned tomatoes and a bit of water along with mushrooms and beetroot right at the end just to warm it. I had wanted to just stirfry some veg. Cirio tomatoes do taste really nice.

How do you make food taste nice?

I opened a pack of smelly mackerel after eating a bit of the chick pea dish and the sweet potatoes and squash. I managed to have a piece but yuck. The pack says once opened use immediately, so I put the remaining 4 pieces in individual bags in the fridge, the pack is dated 26th May. Does it sound ok to do this?

I was still really hungry so had some buffalo mozzarella and a piece of rye crispbread with peanut butter just before going to bed, milk and a bit of red cabbage. I have a huge problem with eating a lot before going to bed, if i'm hungry I can't sleep. But speaking to someone in the NHS, they said don't eat anything after 5pm. I wanted chips :(

    Chicken stirfry sounds good :)

Hmm I can't see burnt carrots being nice!

Not sure about the mackerel, I hate the stuff :rotfl:

You make food taste nice with stock and herbs and spices. And I now swear by my blender!

For example if I made a curry, it would be simmer tinned tomatoes, onions and peppers together with maybe some spinach, and add some curry or chilli powder and some garlic granules to taste. I'd then blend it all up and add some cooked chicken, and cook the rice in veggie or chicken stock for extra flavour.

The chicken stir fry was easy peasy - diced frozen chicken, diced frozen onions and sliced frozen peppers (yea, I'm lazy!) shallow fried in olive oil on a low heat, sprinkled with chilli powder and paprika when browning, then a few splodges of tomato puree when nearly done, and served with rice cooked in veggie stock.

I used to detest cooking. Now it's kind of fun - feel free to ask questions!

  • Hi everyone!

I am struggling to get back to low carbing although I still haven't binged or anything.

I have been so tired a lot since the tonsillitis and the carb cravings have caught me by surprise.

I am going to have a huge salad with prawns and cream coleslaw with berries and cream for tonight's meal.

I can't believe the amount of bloating I have experienced since I caved to the carbs.

Must get my backside into gear and get back to it.

    Hope everyone is well.xx

Does changing the type of carbs you eat make it more manageable?

At the moment I am reading an article on body fat and it says low carb diets are unsustainable so have carbs in moderation and not in the evenings. I don't manage this as my evening meal is my main meal. Be smart with your carbs is what the article says.

I changed the types of carbs I ate and replaced with jumbo oats, rye crispbread, love these

    buckwheat, bulgar wheat etc.

Its great that you have not binged.

And thanks HBS for the recipe. I love the simplicity.

I tried asparagus for the first time tonight as it was dated 10th May but still in the fridge, easy to cook, boil for 5 mins but it doesn't help in the slightest with hunger so not a good snack.

Nah, asparagus is rubbish for anything except serving with roast chicken ;)

I don't eat any white carbs - except the occasional potato - and no grains except brown rice :)

  • Good day yesterday!

Didn't go as low as previously on my carbs but better than I have been although I did have a biscuit!

I have beem snacking on wafer thin ham with coleslaw wrapped in it. I usually have a couple and that keeps me going or I'll have a couple of chunks of brie.

I actually found when i was sticking to it, I ate a lot less - even though I was snacking on so called 'unhealthy' things like Brie and creamy coleslaw. The fact that these things are 'full fat' mean I need a lot less to satisfy me!!xx

They're not unsustainable. But they are difficult if you're surrounded by people who believe you're eating the wrong way and insist on guzzling loads of carbs in front of you.
