Hi, I thought I would join in this week if that is ok. I'm finding it very useful to plan our meals 1 week in advance as it is really helping me to cut down on my shopping. Anyway, here goes:
Fri - SC Beef in gravy, Jacket potatoes and veg
Sat - Beefburgers, HM potato wedges, raita and salad
Sun - Roast chicken and all the bits
Mon - 1970's Risotto (got recipe from index collection ages ago, now a firm fave in our house with the kids) 'Proper' risotto with leftover chicken and prawns for me and OH
Tues -HM Shephards Pie, roasties and veg
Wed - Sausage and Mustard pasta for me and OH, Sausage pasta bake for kids.
Thurs - Pizza and Nachos with salad and garlic bread.
I make pudding 3 times a week and the rest of the time we have fresh fruit and yoghurt. Our puddings this week are rhubarb and strawberry crumble, fruit scones with jam and cream and Pineapple pudding...which I've never made before but have got the recipe from the back of a ground rice packet!
Lunches are just Jacket potatoes. leftovers or sandwhiches and we have cereal for breakfast every morning except saturday when we have boiled eggs and dippy soldiers LOL.
Most of the main ingredients I manged to buy reduced at Somerfields this week as I'm trying hard to get on budget for May.
Cheers everyone, Jo0 -

hiya - of course. Its a bit of a variation on something that i already make and one I saw in this months copy of Olive magazine
chicken breast - either raw chopped, or cooked and shredded
soy sauce
clear honey
spring onions
red pepper
ginger - grated is best but chopped or powdered does the same
canned water chestnuts - sliced or chopped
rice (I use basmati, but anything works)
chopped corriander
cashew nuts - lightly toasted and chopped
I cook the rice and add the chopped cashews and the corriander.
I heat a wok to high, add the chicken and brown lightly, add the veggies and ginger and push around for a minute or so. Add a good couple of tablespoons honey and soy sauce. (A little rice wine is nice if you have any buts its not essential). Cook until it goes all bubbly and thickens into a sauce. Check meat is cooked through and serve with the rice
Enjoy - thnaks for asking - feeling chuffed that someone wants one of my recipesr.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -

Saturdays I have as a come as you like sort of day. I will cook something, but if it's not what they feel like then they have to get thier own from whatevers hanging about. Sundays we have church so I do a lighter meal then because I'm never sure how many I shall be feeding. Sometimes people come back to us, or some of hours go and eat with others so I have to do something that can be stretched, or stored in the fridge depending on final numbers. Also. Not all my lot like fish, so when those of us who do have it, the others have fish fingers.
