Ed for wine I would want the carbon dioxide to escape to help it to clear.

Yup, exactly the same for beer, but I don't think you need an airlock etc.

Have been reading around and there are plenty of old timers who claim to have been homebrewing for 20+ years with their bucket lid open a crack.

I know there are arguments are cleanliness and sterility, but how sterile is the average utility room these days? :)

Thank you Dedicated. Blimey you read all of it?
Ha ha Ed. If I left the bucket lid open a crack I would produce Cabernet Doghair.
You are a step ahead of me since I asked the guy in the homebrew shop and my Pa and there my research ended.

Made it to mortgage free but what a muddle that became

In the event the proverbial hits the fan then co-habitees are better stashing their cash than being mortgage free !!

Alchy if you've been making egg mayo any other way I'm afraid to tell you you've been doing it wrong! Egg mayo is only ever made with salad cream in our house.

I'm planning on making a veggie chilli out of stores we have in. El cheapo baked beans, kidney beans and chick peas in a passata and end-of-the-bbq-sauce-and-relish-jars sauce. We're low on normal onions but have spring onions (or scallions if you prefer) which I can sub in if desperate. also a red pepper in the fridge that is beginning to look a bit sorry for itself, so I'll probably chuck that in for good measure.
