Also if you are really into sport/exercise you could google Brendan Brazier. he is a tri-athlete who is a vegan. I haven't tried his receipes so this is a theoretical rather than personal suggestion. When you eat meat/cheese, it's easy, the answer is 'a sandwich'.
I had this discussion with Mrs E last night, neither of us came up with good ideas. Most of our ideas were basically 'pasta and veg'. I can't get the calories I need for health + exercise from pasta and veg alone :eek:

Another one for couscous here and good old salad bowls - including potato salad, just cook extra tatties the night before for your dinner and put aside as pot salad next day, any dressing and additional veggies you like, including salsa type, olives etc.
Add protein / carbs by having bean salads ... also not a faff to prepare really if you buy good quality tinned beans which are already cooked. Cheaper to soak / cook your own, these don't have to be a faff so long as you factor it in like with the tatties, always plan a day in advance, cuts costs and time factor
Pot of hummus with crudites is also a good summer packed lunch (if you have a fridge to keep it in at work of course).
For winter, soups and slices of loaf - polenta loaf is lovely and easy to slice when cold. I'm not vegan so my fave is polenta, cheese, tomato and green bean or spinach loaf. You could make it vegan by skipping the cheese!Stash busting 2014 45 / 60 (balls of yarn)!

Beans sound like they're my friends, I may have to spring for an actual paper cookbook, not convinced that Kindle cookbooks are that great an idea. Then again, beans look like beans and I'm not lacking in kitchen confidence...
HM houmous (my spelling of a word with 500 spellings) is a fave in our house, I use dried beans as all they need is an overnight soak and 10 mins in the PC. Tend to skip the tahini, as it's very expensive without adding much to the taste.
A downside to all this vegetarian cooking is the gut feeling that it definitely takes longer, although it probably works out cheaper.
We've been almost veggie for 3-4 weeks now, averaging 1 meat meal a week and that's because we had a few packets of mince in the freezer.0 -

Ed I never bother with the tahini either but I do add lemon juice.

My DH makes awesome humous, my favourite is caramelised onion, but he also does red pepper and chilli flavours, can eat a whole portion in one sitting but MFP doesn't like that so I have to restrain myself0
