Hi, newbie here, first EVER post so please be gentle...Love this board, my sort of thing exactly.
Sorry if this is already on here but 2 meals that we like are ones my husband used to have a lot when he was in the Navy - Sausage and bean pie - its just a pack of sausage meat which you put into a large bowl and add a tin of beans, fried onion and mushroom, salt and pepper and any other similar bits you may have in the cuboard - mix it all together and press into a pre-cooked pastry case. Bake for about 30-40 mins and it's lovely, cut a slice and serve with pretty much whatever you fancy (we like chips and sweetcorn).
The other concoction is known as 'CheesyHammyEggy' where you toast one side of some bread under a grill, then turn it and add a slice of ham and then cover the ham with a dollop of mix made of 2 whisked eggs and a generous sprinkle of grated cheese. Grill until the egg is cooked and the cheese is bubbling - yum!
Sorry hope this is OK to post!! Thanks xx

    :hello:
As today is payday for us tonight is our food shop and I'm on a mission... I have a new found love of cooking things from scratch and I want to be able to have a different evening meal for each day of the month and I'm compiling a list to go shopping with tonight so we don't buy anything unneccesary. We haver lovely new chest freezer so have the room to experiment a bit so I'm looking for suggestions.. there's 31 days in may so need 31 budget evening meals to meet my challenge and if anyone fancies joining in then feel free.... :D

    So far I have...
    1. Toad in the Hole
    2. Spag Bol
    3. Chili con carne
    4. Cottage Pie
    5. Cauliflower cheese
    6. chicken risotto/supreme (A concoction I made last night lol.)
    7. Sausage casserole
    8. Beef stew
    9. Cheese and tomato pasta bake
    10. Tuna Mayo and sweetcorn pasta
    11. Lasagne
    12. Jacket potatoes
    13. Homemade Pizza(?)
    14. Turkey with roast spuds and veg
    15. Sweet and sour pork with strips of veg
    16. Sausages boiled potatoes and veg.

    I'm a good 15 meals short! Help!!

What about moussaka? I make it with pork mince (standard size pack in sainsburys 1.08) does 3 days. Layer cold precooked, sliced new pots in the bottom of the dish. Cook up your mince with onion, garlic, tom puree, tin toms, herbs, oxo or a splash of wine (soya or grated carrot etc can be added to make it go further). Thinly slice aubergine, spray with a little oil and grill on both sides til brown. Make a white sauce and flavour with nutmeg. Layer the mince with the aubergine slices and top with the white sauce and grated cheese.
Can be served with either salad or veggies and is really gorgeous.

    Hi Kelinik,

    This is what I do,

First fry the meat (assuming you're not vegetarian) in a wok if you have one but a frying pan will do just as well. Just make sure the oil is smoking hot. Once cooked, remove the meat and keep warm and then fry some crushed garlic, onion and chilli if you like it spicy. Next add any veg you like....mushrooms, baby sweetcorn, sugarsnap peas, carrots etc.

When the veg are just about ready return the meat to the wok add a stock cube mixed up in a little water, a glug of soy sauce and some beansprouts.

Heat through thoroughly and serve with rice or noodles.

To make it taste more like an authentic chinese stir fry add a good glug of dry sherry, some sesame oil, water chestnuts and bamboo shoots.

Have a look at this older thread for more ideas:

Ooooh that sounds delish - thanks hun! :)

I'm not vegetarian but would very happily eat a veggie stir fry. Will have a look at the thread (I did try searching but no joy!).

Two of my favourite current recipes are Hubble Bubble and Savoury Sausage Casserole (the recipe book calls it casserole, but it's more like a bake with juices lol)

Anyway - these are the recipes.

    Savoury Sausage Casserole

    Ingredients
    2 tablespoons oil
    1 large green pepper, chopped
    450g / 1lb tomatoes, skinned and chopped
    450g / 1lb courgettes, chopped
450g / 1lb cooking apples, peeled and chopped
    1 tablespoon chopped fresh thyme
    Salt and pepper
    450g / 1lb sausagemeat
    1 large onion sliced
    100g / 4oz Cheddar cheese, grated

    Method

Heat the oil in a frying pan. Add the green pepper and fry gently for two to three minutes. Add the tomatoes, courgettes, apples, thyme, salt and pepper and stir well. Cover and simmer gently for 20 minutes.

Meanwhile, press the sausagemeat into a 20cm/8in square baking tin. Scatter the onion rings on top. Pour over the vegetable mixture and sprinkle with the cheese.

    Bake in a preheated moderately oven (190°C / 375°F / Gas 5) for 45 minutes.

Serve hot with baked potatoes or crusty rolls and a salad.

    **********************************************************************

    Hubble Bubble

    Ingredients
450g / 1lb potatoes, peeled, cooked and sliced
    4 rashers streaky bacon, chopped
    1 onion, finely chopped
    225g / 8oz pork sausages, quartered
    2 eggs
    150ml / ¼ pint milk
    Salt
    Pepper

    Method

Line the bottom of a greased baking dish with half the potato slices. Mix together the bacon, onion and sausage pieces and place on top of the potato layer.

Lightly beat the eggs with the milk, salt and pepper and pour into the dish.

Cover the top with the remaining potato slices.

Bake in a preheated moderate oven (180°C / 350°F / Gas 4) for about 45 minutes until the eggs are set.

I don't cook the sausages, bacon and onion before putting into the dish, but I suppose if you don't like anaemic sausages you could brown them off first. And I use the sausages from frozen with no ill effects :)
