The 'different meal for every day of the month' challenge

:hello:
As today is payday for us tonight is our food shop and I'm on a mission... I have a new found love of cooking things from scratch and I want to be able to have a different evening meal for each day of the month and I'm compiling a list to go shopping with tonight so we don't buy anything unneccesary. We haver lovely new chest freezer so have the room to experiment a bit so I'm looking for suggestions.. there's 31 days in may so need 31 budget evening meals to meet my challenge and if anyone fancies joining in then feel free....
So far I have...
I'm a good 15 meals short! Help!!

- Spag Bol
- Chili con carne
- Cottage Pie
- Cauliflower cheese
- chicken risotto/supreme (A concoction I made last night lol.)
- Sausage casserole
- Beef stew
- Cheese and tomato pasta bake
- Tuna Mayo and sweetcorn pasta
- Lasagne
- Jacket potatoes
- Homemade Pizza(?)
- Turkey with roast spuds and veg
- Sweet and sour pork with strips of veg
- Sausages boiled potatoes and veg.

Bacon and potato hotpot on the cheapest meal ever thread is good.

Turkey and sweet potato curry is one of my usual ones.
HM Meatballs?
HM Burgers?
HM Pizza (I cheat and use bought plain bases and add the toppings).
I do smoked pork sausage pasta - fry an onion, chop up smoked pork sausage, add jar of passata, herbs, paprika and cumin, sweetcorn too if I have any. Pour over cooked pasta. The kids love it.

Good food website has some good easy recipes on. I use their 101 books and they are easy and very straightforward!!!

bangers & mash
stirfry in all its guises
5 bean chilli
honeymustard chicken thighs ( chips/ wedges/ jacket) & salad
mediterranean veg crowns & pots as above etc
eg cheese feta & spinach pasties/. crowns
chicken & mushroom lasgne ( ise uturkey its cheaper!)
moroccan veg casserole with chicken legs/ thighs & cous cous:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Curry and rice? So many good recipes on the board (vegetarian/thai/all types of indian)
They also freeze well!
How simple are you prepared to go...?
Grilled fish with a quick sauce* with new spuds and greens.
Quick sauces for me are:
olive oil or bit of butter warmed in a pan and
a chopped fresh herb (or 2) or
chopped capers or
chopped chili and
a squeeze of fresh lemon or lime or orange juice
I usually improvise which and taste as I go along!
Don't know how child-friendly this is... they could always have just the squeeze of citrus juice.
I also often have veg-only soup in indiv portions in the freezer and make 'instant stew' by browning some meat and adding it to a portion of soup, with some pulses and grains/spuds.0 -
Prawn risotto is good too (but do the risotto and just add the cooked prawns about 10 minutes before the end).
If Pork chops are on offer, they make an easy meal. I like to do them with my mum's recipe (unimaginatively referred to as "rice onions and potatoes"):
Layer of uncooked rice in a greased ovenproof dish. Add layer of sliced onions, cover with a layer of sliced potatoes. Pour made up stock over the dish to just reach the top of the potatoes. Cover. Cook in the oven for about 40 minutes + until all the stock is used and the potatoes are done.

Would you consider it cheating to do a recipe with different main ingredients
eg. Lasagna also with chicken / vegetarian
Cauliflower Cheese with Broccoli or Cauli and Broccoli
Sweet and Sour beef/ chicken/ prawns
Also 'old fashioned' dishes
Meat Pie
Meat and potato Pie
Liver and onions
HM Quiche
Sorry brain gone can't think of more but I know there are many0
