The 'different meal for every day of the month' challenge

    I love making spicy chicken bake (not sure what else to call it lol). You need some new potatoes, carrots, sweet potatoes, red pepper and butternut squash. Chop them all up into fairly even-ish pieces and place them in a baking tray (as a rough guess - and bearing in mind me and my partner eat a lot lol - I normally use half a small squash, a good handful of new potaotes, a large sweet potato, half a pepper and a couple of carrots, it's usually a good roasting tray full, but this does give us some leftovers). Toss the veg in a little olive oil (not too much as the chicken is oily), and add some chopped garlic, fresh sage if you've got it and a good spoonful of cajun spice (I like the fiddes payne one). Take two chicken thighs per person, trim and rub with a little more oil and spice, then roast in a hot oven until the chicken is cooked and crispy and the veg is well roasted. About ten minues before the end drizzle a good spoonful of honey over it all, to add a lovely sweet sticky glaze. We normally eat it just like this but it's also nice with brown rice or cous cous.

    Any left over veg is really nice added to cooked pasta or cous-cous - it makes a good packed lunch. I also always make soup with the same veg - saute off an onion and some garlic, when it's soft add a good spoonful of cajun spice and then the veg. Add chicken stock and simmer until soft, then blend. It makes a great dinner with some crusty bread :)

    Chicken and pasta (multi-coloured twirls look nice) in peppercorn sauce with grated cheese on top. Serve with garlic bread and/or salad.
    Cooked pasta layered with fried onions, cheese and smoked ham. Top with grated cheese and grill until brown.
    Fried chicken and bacon on mixed salad leaves with honey and mustard dressing.
    Cheese omelette with HM bread and salad.
    Liver and bacon casserole.

    paprika pork and rice
    Piglet pie (like cottage pie but with pork mince and potato pastry topping)
    Bangers and beans casserole
    soup and crusty bread
    stew and dumplings
    roast chicken
    saussage meat and suffing lattice
    stovies
    Beef or pork stroganoff

    thats about all i can think of just now.. longer list than i thought!

  • How about a few simple meals ie:
    beans on toast (maybe a bit of cheese or bacon or egg)
    omlette
    egg and chips (with butties for dipping in egg)

    These are great for when you can't be bothered to cook!

  • i always like to have some indian food or greek or moroccan food to add some variety!

    i have an indian friend whose husband has said he would divource her if she ever dared cook the same meal twice a month so she is a great help!

    Give you two guesses what my meal plan is for the week!

    One thing I do now, is cut out all my favourite recipes from my magazines (that I get free subscription with Tesco Deals tokens!) and stick them in a scrap book. It makes Meal Planning so much easier as I can look rather than think about what to have.
