I'll just add my hugs to everyone who's had a sh***y day :grouphug:
Had planned roasted veg lasagne for dinner but realised today I'd forgotten buy lasagne sheets - in a moment of inspiration I decided to make pancake cannelloni instead as I had the ingredients and it was more festiveEnded up making pancake lasagne as I couldn't figure out wrapping it round the filling (they were particularly ragged crepes as my pan is rubbish and the filling still-hot roasted veg in tomato sauce which was hard to handle). Was delicious
then had the leftover pancakes with nutella afterwards
Spent 89p on 2 pints milk at Mr M, could have probably waited until tomorrow as we have enough left for breakfast, but I hate running out.Part time working mum | Married in 2014 | DS born 2015 & DD born 2018

4oz self raising flour.
4oz caster sugar.
2 eggs - I used medium.
1 small orange (or use lemon)
Cook in 7 1/2 inch greased lined sandwich tin - I used a 6 inch tin and cooked for longer time.
Cream marge/butter with sugar. Beat in eggs. Then beat in grated orange/lemon rind and juice. Fold in 1/2 oz coconut and flour. Put in tin and sprinkle remaining 1/2oz coconut over cake.
Bake - centre - oven - 190 - 30 minutes or until cooked. I cooked at 180 as my oven is hot with the new fan.

Having Mackerel with a harissa and orange glaze with sweet potato mash and green beans courtesy of my house-mate. It's the first time I've tried a fresh mackerel (ie not vacuumed packed and smoked), so I hope it's nice!

Hi all, no further grocery spends to add yet. Didn't eat anything till this evening when i made up for it by having some stilton and tiger bread, followed by pancakes with lemon juice and sugar.

£0.78 2 packets of pancake mix
£5.38 2 packs of Belvita biscuits (pricey I know but the only way I can get bf to eat breakfast/at work)
total £7.05 but forgot eggs so will be spending a pound or so later on some.
So glad that the weekend comes out of a different budget (evening meals only as we will be away)! But only 12days until pay day (phew!)************************************
