Hey don't forget to put the bones in a pot, cover with water and simmer for 2+ hours. You've either got the basic of a lovely soup - or if you've a little bit of chicken left a risotto (with peas is lovely).

If I'd been a bit more organised I could have made some stock earlier today and had chicken risotto for dinner!

I've stashed the carcase in the freezer for now and will wait till I have another one to make up a batch of stock ;)

I cooked a huge chicken in the slow cooker yesterday with which we had a roast dinner. Today I have made a chicken curry and there is still some left. What do you suggest I make with some undermeat and leg meat?

Check the Cooking section of the MEGA Index sticky and you'll find threads on leftovers and on stock :)

If you check the Mega Index then click on the cooking and recipes section, there is a section for "chicken and other poultry". That should get you started. Don't forget to check the Recipe Thread for ideas too!

Bit of a dilemma... how long will reheated cooked chicken last?

I did a chicken for dinner on saturday and had a fair bit left over as there was only 2 of us. Foolishly I thought I'd use said leftover chicken for a chicken curry tonight - and used all of it! Not thinking about the fact that I now shouldn't reheat it again! So there is at least 1 meal possibly 2 left in the pot and I can't feed it to the dog (unless she lives in the garden for the rest of the week - trust me it would be chemical warfare!) so is there anything I can do with it? Will it keep till tomorrow in maybe some fajitas for my lunch if I don't re-heat it?

oh no! dont bin it!! well if you have now never mind, but if not it's still ok to eat it cold, but i'm pretty sure you mustn't reheat it again.
is it bearable to eat cold?? if so then a cold chicken curry wrap of some sort might be nice??
if not, then perhaps you could just use the chicken peices from the curry (ie pick them out and 'wash' them!!) and have chicken sarnies/cold chicken salad for lunch tomorrow. I'm no food expert at all, so god knows if 'washing' the sauce off is a feesable idea, but it sounds ok to me! (i once washed the sauce of pasta with boiling water, as it was a horrible sauce, and then ate the pasta) i'm sure it breaks some kind of rule but it's gotta be better than throwing food away!!
