2 onions sliced, clove of garlic sliced, 1lb tomatoes , 2 sliced aubergines sliced, 4 courgettes sliced, 2 green peppers deseeded & sliced, tomato puree /paste/ketchup 3 tablesspoons, oil, salt and black pepper to taste.
saute onions and garlic in oil till transparent added all rest of veg and heat through 2-3 minutes transfer to preheated slow cooker sprinkle with black pepper and salt cook on low 6-9 hrs
I have used this basic recipe and mixed the amounts according to whats in the cupboard it and it freezes well0 -

I've just bought a slow cooker after reading all the threads on here. Is it possible to overcook meat in the slow cooker. Think I have just ruined a large piece of ham by leaving it in too long. It seems to be quite dry even though I cooked it in apple juice. Any advice please.0

Thank you for all the receipes posted. I usually only use my S/C for beef with mushrooms and gravy and its delicious and so easy but I didn't know what else to make in it. Now I am bursting with ideas, easy, quick and cheap ideas!!!! And thats the kind I like.

Hiya,
Just joined and found loads of lovely recipes in the messages so here is one in return.
2oz flour
1t Baking powder
1/2 t salt
3oz light brown sugar
1T cocoa powder
4T milk
1/2 vanilla essence
1T melted butter
2oz walnuts chopped - optional.
Mix flour, b powder,salt, sugar and 1T cocoa. Add milk, butter and vanilla. Mix well and add nuts. Place in slow cooker pot.
Then
4oz light brown sugar
2T cocoa powder
1/4 boiling water
Mix together 4oz brown sugar and 2T cocoa and sprinkle evenly over batter. Pour on boiling water, cover with foil and cook high 3hours or until set.(But I have a really old slow cooker so perhaps will take a shorter time with the new ones?)

Don't remember where I got this from but it turns out a chocolate pudding with a sauce. I didn't add the nuts.

The t is a teaspoon and the T is a tablespoon. Sorry should have explained my shorthand. Also seem to remember the foil sticking, might be better with parchment?

My husband is a vegetarian and only eats fish. My stepson and I eat meat but if I am to do the slow cooker thing it has to be a veggie recipe so OH won't get left out. Any suggestions?Newbie Debt Ninja0

Has anyone tried the Remolska thingy from Lakeland??? I keep looking at it and wondering. . .
A friend of mine has a remolska, and she's very happy with it. It's very much like a slow cooker, except that the heating element is in the lid, which means that things with a 'topping' get nice and crusty. I think H said things brown a little too, which suggests to me that it may not be quite so forgiving as a SC when just left on all day. But just like a slow cooker, it's v. cheap to run.0
