It won't as long as you turn on airplane mode and turn on wifi.

But then I won't be able to use phone at all. If I put £10 on a PAYG sim, I can make a few texts & recieve a few texts.

On many phones airplane or offline mode means no wifi

If you are going to do that instead of getting a local SIM, then consider getting a Free Giffgaff SIM from one of it's members, as card from them comes with a £5 bonus for the first £10 topup.
GG charges £5 per MB. With the bonus that will take the cost down to £3.75. :)
(Giff Gaff SIM should work with 02 mobile phones)

But if your phone is unlocked to other networks, I would look into a local(Mexico) SIM.

You can set up to send 10 text messages a month free via the O2 website. You would still use data of course, so do it mainly over wifi, though there are ways to do it using only a few kilobytes.

And there are third party text providers with rates from about 2 pence a message, such as smsbug Fishtext and Vyke, and these use only a few kilobytes per message. Trial account with a few free messages with each.

They simulate sending from your own number, so people will recognise it and replies come to your phone.

Yes but you can usually override it (on Android anyway).

If you turn on Airplane mode then go to Wifi Settings and Manually activate it, it stays on Airplane mode but with Wifi on.

Never having "bought" hotel WI-fi can you use your one payment & use it in a few devices? Ie can BF & I share it between both phones & an iPad or can you only use it in one device & have to pay per device?

Some hotel groups (Marriott for example) charge per connected device.
