Margaret54, I know what you mean about being all excited about a takeaway. We went to sunny hunstanton and decided to have some chips at the seaside. It was £4.60 for 2 portions of chips with gravy. If I hadn't of been so hungry I would not have bothered.
Home made is often so much better, In Tosco there is birds eye 4 fish portions on offer for 1.99 and chips well they can cost pence to make.
Peanut I think coleslaw can be made quite cheapily from mayonnaise with finely grated carrot, grated white cabbage. Some people put some onion in as well around here.BSC member 137

PEANUT I never buy coleslaw it's so very easy to make yourself. All you need is a piece of white cabbage (the very pale one that is solid) a couple of good sized carrots and 1 onion along with some mayonnaise and black pepper. All you do is slice the cabbage very finely into a BIG bowl, grate the peeled carrots into it too and then chop up the onion as small as you can add it to the bowl, give a really good grinding of black pepper and add the mayonnaise a tablespoonful at a time until it is as sauced as you like. Voila Coleslaw!!! If you like you can add in some sultanas and chopped apple which are also nice, but I must admit to preferring the basic recipe, we run on it, Cheers Lyn xxx.

Peanut Potato Salad - similar to coleslaw - an 'assembly' job! New potatoes (in their skins if you prefer) boil until just cooked then when they're cold chop them up with some onion & you can add chopped hard boiled eggs too for a 'twist' then add Mayonaise/Salad Cream to the consistency you prefer. Or - take the easy way out & buy a tub or two at Lidl - tasty & very good!Small victories - sometimes they are all you can hope for but sometimes they are all you need - be kinder than necessary, for everyone you meet is fighting some kind of battle0

A question for the bakers amongst us.....I want to make a lime and coconut cake, but I can't decide what form it should take.
Sponge cake or cupcakes?
coconut cake or lime?
Coconut buttercream or lime and icing sugar icing?
Lime curd or not?
Toasted desiccated coconut or not?
Lets see what you talented lot can come up with out of that
P.S I'm the only one in the house that likes coconut but will have people willing to sacrifice themselves to save me from eating it all myself ......maybe0 -

If anyone has any spare positive vibes, could they please lob them my way? Just been put on notice of redundancy - again. This time is worse as I've separated from my husband since the last time and now have to pay a large-ish mortgage. Then again, any mortgage seems large when there is no wage coming in.
It's just totally pants that it happened just as I had decided to take a holiday away (starting next Wednesday). Had booked the cats in to the cattery so only hope they won't want to charge me when I cancel.
Feel totally gutted. There just aren't that many jobs out there in this neck of the woods - particularly ones that pay anything more than minimum wage.

Peanut
Variation on coleslaw (and very yummy) is a fennel coleslaw. Equal amounts of thinly sliced white cabbage and thinly sliced fennel, sliced shallot, juice of half a lemon, mayonnaise.
Put sliced cabbage, fennel and shallot in a bowl with the lemon juice and a pinch of salt. Leave for 5 minutes to allow the lemon and salt to soften the vegetables. Add enough mayonnaise to bind the coleslaw together and add black pepper to taste.
The recipe suggests 80gms each of cabbage and fennel to make enough to serve 2, but personally I think that quantity serves more than 2.

Thanks so much for the offer to mind the monsters. Thankfully I hadn't booked my holiday yet, had planned to sort it tomorrow. Part of me wants to go away anyway, but I know it is not sensible to do that if there is no money coming in. I will try the job club, even though they are probably busy still sorting out the aftermath of the Axminister carpet redundancies.
