    Fuddle :

The recipe looks great but begs the question : If you aren't able to keep Birds' Custard Powder in the cupboard for when you need it, are you likely to have a vanilla pod at hand at the right moment?

no, but the recipe suggests you can use vanilla essence..... which I have, along with eggs, milk and sugar. :)

That's fine then - we've got vanilla essence in our cupboard too - it's been there for years and the cap is so gunged up it won't unscrew - always wondered what it was used for. I'll WD40 it and try out the recipe at the weekend. LOL.

If you keep a jar of sugar for tea and coffee, it's easy enough to store a vanilla pod and re-use countless times. The last time I bought them they were £2.99 for just 3, at that price you need to squeeze every last drop of flavour from them. But miles better than the extract.

I have a jar of caster sugar with two vanilla pods buried in it. As I use the sugar up I top up the jar with fresh. These same two pods have been in there five years now and there's no sign of them wearing out.

ETA: I find it's worthwhile adding a little cornflour to the above type of recipe...milk and eggs only have a fair chance of turning into watery vanilla flavoured scrambled eggs if you're not really careful.
