Wow - I would be :D too if I had that to look forward to. :T Sounds lovely!

I was struggling to get motivated this morning so I wrote a list and took great satisfaction in ticking each task off...then rewarded myself with brunch :p
  • Yesterday's leftovers for lunch - chicken shawarma, lettuce and coriander salad & lemon creme fraiche (recipe from Sainsbury's Magazine) with green rice (Thomasina Mier's recipe), wholemeal pitta, pickled green chillis and green olives - could definitely do with a nap now zzzz
Mortgage at highest (April 2008): ~£195,000
    Mortgage-free: January 2021
Retired: June 2022 (186 months early!)
  • I got my second wind and got all my jobs done :T

Pineapple, cashew, coconut, spring onion & cardamom rice salad with hula pork (the pork shoulder joint slow cooked in pineapple juice, soy sauce, tomato ketchup, cider vinegar, sriracha, ginger & garlic) and roasted peppers for dinner - another new recipe that is a keeper - followed by chaunsa mango for dessert :)

    Eggs IN 5
Eggs OUT 6 (1 box given to FIL)

  • And I've made some borage flower ice cubes for next weekend's G&Ts

a penny picker upper. MFW approx 78% to go | FIRE 3 years worth (30% savings rate: now aiming for 40%!) | Normality is a paved road; it's comfortable to walk, but no flowers grow on it | Whatever you're meant to do, do it now. The conditions are always impossible | The only thing you absolutely have to know, is the location of the library

Here's the recipe P*M - the only thing I wouldn't do next time is soak the cashews.

MWC that recipe looks delish for the pork.
