muddywhitechicken - we have eaten the Cambodian Aubergine Curry, it was Saturday night's teaBut the recipe (including the Kroeung spice paste) is HERE and of course, you will include all the additional things like shrimp paste/fish sauce that I miss out due to being veggie - so I hope that it tastes super awesome for you
I love it, it is so fragrant
I have, however, used up all my kroeung paste now - I make a batch and freeze in big (tablespoon?) cubes and it works great from frozen, loses nothing of the fragrance at all. I didn't take a pic of Saturday night's offering, but there is a pic of a version that I made on my other diary. However, the blog pic with the recipe is much better shot than I could ever manage to get
And I agree with karmacat - the veg market photos are awesome - wish I had access to markets like that, I'd be in culinary nirvana
