  • Today I have:

    - requested a TCB payment of £13.88
    - received confirmation from Virgin Media of payment for 12 months Line Rental Saver (a saving of £46.80 over paying monthly)
    - spent 65p on a bag of Maltesers :o The money had been on my work vending card since last year so it wasn't real money :p
    - eaten leftovers from Sunday for dinner (roast chicken and potato, cauliflower and leek gratin)

    Oh, and I went for a walk at lunchtime

    2 eggs today (Miss Q and Miss M) :)

    Still another 9 days to pay day :eek:

    - weighed myself - no change from last week but I'm happy with that considering the meals I have eaten recently
    - spent £4.91 on a travel guide for our holiday (9 weeks today :j time to get serious with the diet)
    - been out for a pub lunch with my team to celebrate my birthday (no cost to me other than calories... :o)
    - received CC statement for 21/12 to 20/1 - lowest spend in living memory :D:T:rotfl:

    Puy lentil, spinach & bacon soup with goat's cheese toasties for dinner (another Christmas cheese finished!)

    2 eggs - Miss B and Miss Q today :)

  • 200g puy lentils
    500g tomatoes
    1 tbsp olive oil
    140g rindless unsmoked streaky bacon
    2 red onions, chopped
    4 cloves garlic, finely chopped
    150 mL white wine
    400g baby spinach
    500mL chicken or vegetable stock
    6 tbsp roughly chopped parsley

    1) Bring a large pan of water to the boil, add the lentils and simmer for 20-30 minutes or until tender (we cook for 20 minutes), then drain them into a sieve.
    2) Meanwhile, bring a pan of water to the boil, cut out a cone from the top of each tomato and cut a cross in the bottom, plunge into the boiling water for about 20 seconds, then into cold water. Slip off the skins and coursely chop the flesh.
    3) Heat oil in a large pan over a medium heat. Add the bacon and fry for 7-8 minutes until golden, stirring occasionally. Transfer to a bowl using a slotted spoon. Add the onions to the pan and fry for 10-15 minutes until softened and lightly golden, stirring frequently. Add the garlic and fry for a couple of minutes, then return the bacon to the pan. Stir in the tomatoes and cook for 3-5 minutes until they collapse. Add the wine and simmer to reduce by half.
    4) Add the spinach, turn up the heat and cook until it wilts, stirring occasionally. Stir in the cooked lentils, add the stock and plenty of seasoning, bring to the boil, then stir in the parsley.

    Goat's cheese toasties - arranges thin slices of baguette on a baking sheet. Top with slices of cheese, drizzle with olive oil and grill until golden and crusty.
