Delicious dinner tonight - duck breast with a pomegranate sauce, bubble & squeak, tenderstem broccoli and roasted vine tomatoes
Not really diet food though...Mortgage at highest (April 2008): ~£195,000

Oooooh we've got duck breasts tomorrow. I'll look up a pomegranate sauce - I have 1 pomegranate and one carton of pomegranate juice, so hopefully that will do.
Thanks for the idea.

Hi Tilly
Here's the recipe we used (serves 2)
Mix together 3tbsp pomegranate juice, 3 tbsp orange juice, 1tbsp brandy and 2 tbsp honey together with 4 sprigs of thyme. Use to marinate the duck breasts for 15 minutes. Whilst you're cooking the duck, boil the marinade for a few minutes until syrupy. Add 150mL chicken stock, 1tbsp balsamic vinegar and seeds from 1/4 pomegranate and boil again until syrupy. Sieve. Serve drizzled over and around duck and sprinkle with pomegranate seeds.Mortgage at highest (April 2008): ~£195,000

Morning MWC, thanks for the recipe, I have all the ingredients except fresh thyme, will have to use dried and see how it goes.
Your menu post was well timed, thanks

That sounds gorgeous :T. I have OJ and balsamic vinegar, can someone nip out and get me the rest please.

Morning Tilly
It didn't taste that thyme-y so be careful how much dried thyme you use!
Have a good day

I miss having chickens! The eggs are so delish and the birds themselves are lovely too. I'd like to have them again at some point, but we have to be so careful re foxes around here. Would need another Fort Knox arrangement to keep them safe."Have nothing in your houses that you do not know to be useful, or believe to be beautiful." William Morris0

We've been incredibly lucky with foxes - 2 visits in 4.5 years (last one over 2 years ago) and both times The Girls were in their fox-proof run at the time. They were freaked but not hurt. I'm surprised (and extremely relieved) that once the fox knew they were there he/she didn't come back.Mortgage at highest (April 2008): ~£195,000
