    Ok firstly mad props for getting through the Tae Bo video, it is a really hard one. I find the Jesus thing a bit difficult to swallow as well. As an American expat, I can tell you there are people who do that verbal tic in conversation to your face and it's hard to manage!

    Mexican potato bake - its an old slimming world recipe but really nice.

    Chop up some spuds into bite sized pieces and boil until nearly cooked.
    Meanwhile, dice a red onion, fresh tomatoes if you have them (cherry tomatoes work well) and red pepper and cook through in a little bit of oil. Add the potato, add a big pinch of dried oregano (to your taste but a big dollop is nicer) and then stir through enough passata to cover everything liberally, warm it all through.
    Then transfer the whole thing to an oven proof dish, cover in grated cheese and bung it in the oven until the cheese is melted and browned.

    I make it in individual dishes as it just seems nicer that way. I normally have it with a bit of salad or just on its own - its very filling!

    PS an easy way to get 3 of your 5 a day in too

    I don't know if I'd manage not to snigger! It didn't put me off the Tae Bo thing - in fact I think it made it even more entertaining ;)

    Dropped the dog off for his make over and popped into town for a few bits trying to use as little cash as possible.

    Boots - shower gel and deodorant - total cost 52p! (using points)
    Pound shop - 2 packets of breakfast bars - £2
    Sainsburys - 8 cans of dog food, packet of chewies, red pepper, red onion - total cost 40p (using £5 Nectar points)
    Local shop - reduced bread 49p (now in the freezer for next week)

    Total cost = £3.41
    I knew I'd been good but not that good!

    So only the fresh stuff to buy on the weekend. Hurrah!

    Also picked up a nice birthday card for mum for 89p in a cheap card shop and 2 first class stamps.
    I must do the dog insurance claim today too and get it in the post.

    Absolutely no exercise today other than dog walking for me - no excuse, just couldn't be ar*ed!!! :D:D:D:D :rotfl:

    Normal service will hopefully be resumed tomorrow.....


    I did manage to get the insurance claim sorted and in the post, mum's birthday card posted and an M&S gift card ordered.
    Had the planned use-it-up "breakfast" tea - and very nice it was too.

    Its a week since I started back on the diet and exercise regime and so I did my formal weigh in this morning and have a total of 3.5lbs since my post Xmas weigh in on the 28th :j. Now just 1lb away from my lowest weight again:) I want to get there and then lose another 5 or 6 lbs.

    Just off to the park with the dog and then for a run before the motivation eludes me again.......:o

    Am forcing myself to do a load of marking now - so computer is going off!

    Finally finished that set of marking - only 1 more set to go now - will the torture ever end?:mad:
    Took the dog for a walk mid afternoon and feel like I've tweaked a hamstring - hope its better tomorrow. I don't need many excuses not to go running:o

    Making tea from a quorn chicken and leek pie from the freezer, an aging savoy cabbage and new potatoes - the fridge is now looking very bare. Will have to go shopping tomorrow or Sunday for more fresh stuff. At least all the F&V bought have been used up for once.

    Had a complete NSD too:j No 2 for January.
    Still eeking out the money left until payday.10 days to go now.

    Used up a hair treatment in the bath today - don't know if its done any good but it smells nice. Going to have a quiet night (for a change!) and maybe force myself to make a spreadsheet for exam results due on Thursday for the GCSE kids - always a nervous time for teachers and kids alike.

    Had the heating off since last night too - its been quite mild here but now its dark the house is quite chilly so have put it back on for a couple of hours. Every little bit helps I suppose.
