I have a little black book in which I write down all recipes I find on here a lot of yours have gone in there today,like you I also write down alternatives will post some of my own later but at the moment I had better get back to the the house work

    Bit of an odd mix

    We are not fans of aubergine, so I don't buy it

    The beetroot could be used in a borscht
    Beetroot risotto
    Beetroot and feta flan
    Baked potato filled with beetroot and feta
    Pasta bake with beetroot and bacon or ham and a cheesy sauce
    Beetroot and cheese puff pastry tart
    Chocolate beetroot cake

    Veggie toad in the hole

    [FONT=&quot]4 large onions [/FONT]
    [FONT=&quot]600g mixed root vegetables, peeled and cut into wedges (carrots, beetroot, swede, parsnips etc)[/FONT]
    [FONT=&quot]salt and pepper [/FONT]
    [FONT=&quot]A good glug of olive oil [/FONT]
    [FONT=&quot]100g plain white flour [/FONT]
    [FONT=&quot]A sprig or two of rosemary, finely chopped or a tsp dried rosemary will do[/FONT]
    [FONT=&quot]A pinch of chilli powder [/FONT]
    [FONT=&quot]1 tsp mustard, any one you like I use grainy mustard, but you could use English or Dijon [/FONT]
    [FONT=&quot]2 eggs [/FONT]
    [FONT=&quot]100ml milk [/FONT]
    [FONT=&quot]A knob of butter [/FONT]

    [FONT=&quot]Preheat oven to 220°C/Gas 7.

    [FONT=&quot] Add the prepared veg. Cut half the onions into wedges. Toss the veg in a roasting dish with the oil, chopped rosemary and chilli and season well. [/FONT]

    [FONT=&quot]As soon as your veg is in the oven, make your batter. [/FONT]

    [FONT=&quot]Add the mustard, egg and milk. Whisk to a smooth batter. [/FONT]

    The aubergine and chilli you could use to make a Chinese-style fakeaway :)

    I'll see if I can poke about for a proper recipe (sorry this is a little vague), but I'm sure I've made something before along the lines of:

    Sauce
    1 onion, sliced
    Chillies, sliced (as much or as little as you like, I'm a wuss so I go easy)
    1 clove garlic, finely chopped or minced
    Soy sauce, to taste (start with a small spoonful and work up)
    Water/vegetable stock
    Cornflour
    A little oil

    Heat the oil, add the onion and saute until translucent. Add the chillies and garlic, cook until fragrant.

    Add water/stock and soy sauce, bring to the boil, reduce to a simmer.

    Add a little cornflour to thicken.

    It's quite a versatile little base; you can add ginger, or peanut butter, as you like.

    Aubergine

    The aubergine you can either grill, steam, or roast. All are good!
    For grilling, cut the aubergine into slices about 1cm thick. Rub with a little oil and cook either under the grill or in a griddle pan on a medium heat until they soften and brown a little on each side.

    For roasting, cut the aubergine into wedges, pop on a baking tray and drizzle with oil. Cook for around 20-25 mins (or until soft in the middle with crispy edges) at 200c/gas mark 6.

    For steaming, cut into decent sized pieces and steam for 10 mins. This will make the aubergine incredibly soft; if you want to crisp it up on the outside then toss it in cornflour and shallow fry.

    (I love steaming/frying; more effort but it is silky and delicious! I used to eat a lot of aubergine... my friends used to call me aubergine queen :rotfl:)

    Serve the aubergine with the sauce poured over. You could have it with rice and steamed/boiled broccoli. Cheaper than a takeaway and healthier too!

    I Sore a good recipe on face book that looked great an when tried was yummy all you need is one banana very well mashed,bet up two eggs mix in well with the banana spray a pan with fry lite fry as little pan cakes great with fruit on top yoghurt & a drizzle of honey for breakfast

    Hello everyone. Hi BB Just to say thankyou for the Veg. Toad recipe. We had it last night for supper and it was super. Had some LO onion gravy in the freezer and carrots, parsnips in garden, some HG onions and squash in store. Didn't bother with potatoes and extra veg just had the Toad and gravy. Will have it again.     Oranges
    Asparagus
    Pears
    Baby potatoes
    Romaine lettuce

    I won't buy oranges (just satsumas when in season) but everything else can be used well in our house :)

    I think I will make a nice tray bake with the potatoes, mushrooms and asparagus just adding some bacon and maybe some chicken.

    Kids will take a nice chicken caesar salad with sliced shrooms to school. Another day they can have tuna/potato salad.

    Will make some crustless asparagus and mushroom quiches for lunches/snacks.

    Spanish tortilla with eggs, cooked baby potatoes and a fried onion.

    Probably make a cheat risotto one evening (pouch microwave rice, the mushrooms and half a can of soup) as it is the easiest meal ever and tastes really good.
