  • I made this tonight and it was amazing thank you butterfly :)

    QUOTE=Butterfly Brain;67508359]Butterfly's Mushroom Risotto.
    Serves 4

250g arborio or, as I am using the reduced to 49p for 500g short grain rice in Aldi 25p

500ml vegetable stock or two stock cubes made up 16p

A clove or two of garlic, crushed or you can use garlic salt or puree 10p

    A sliced onion, fried 10p

A good knob of butter 15p

Mushrooms, wiped and sliced, whatever you have, I like to use chestnut because they are full of flavour 89p But I have been known to use the cheap button mushrooms from the market 50p, But try not to use the large flat mushrooms as it turn the risotto a murky grey colour.

Put the butter in a large pan and melt gently
rinse the rice well, drain in a sieve then add to the pan and coat it fully in the butter.

Gradually add stock to the rice, making sure the stock is absorbed fully before adding the next lot of stock, keep doing this until all the rice is absorbed.

Meanwhile in between adding the stock, saute the mushrooms in butter with the garlic, add to the pan with the rice and fry an onion and add that as well, stir through and add more stock, allow it to absorb and serve.[/QUOTE]

  • Went to the fridge today for some cheese and some burger has munched the lot  so I ended up with a sliced tomato sprinkled with salt in a HM roll OMG it was soooo good and best of all cost pennies :D

2 slices of bread and butter and one large sliced tomato sprinkled with salt and left for 10 minutes to allow the salt to sweeten the tomato

I also love lettuce sarnies with a sprinkle of salt and cucumber sarnies with salt and vinegar :D

Disappointing super six this week :( I have never seen good sprouts in ald! but could use the other items.

I love leeks so will open freeze then bag lots of sliced ones (I don't blanch and will just chuck in casseroles/soups).
    DD loves cherry toms
Would take me a long time to get through 4 garlic bulbs!
    Kiwis, not bad
Limes - might get them and open freeze for drinks but not fussed

I like the super six when you can instantly see a meal in them! Veg that goes really well together.

I am with you re celery. I had it in a casserole once and was amazed that it has a nice mild flavour when cooked! Nothing like the devils food that it is when raw... ewwwwwwww

I might get some and freeze in portions to chuck into casseroles over the next month or two.

I was a bit disappointed with the choices too but will make the best of them in lunches.

If you cook celery in the microwave in water until its tender(i peel mine) drain it, and either a cheese sauce under the grill or grated cheese then in the microwave to melt the cheese, its lovely with chicken or gammon.

I stick very finely chopped celery into everything I'd put carrot and onions into - call it the holy trinity base. It imparts a rich savoury flavour, no one notices and its more veg in your diet padding out the meal with good stuff. Great stuff celery.

I do the same, but also love it raw:cool:

  • Celery is a great vegetable, I put it in stews, bolognaise, stir fries, make celery soup and love it with cream cheese.

It freezes well and I always buy it when it is cheap, chop it up, open freeze then bag it up and it is always there for when I need it.
