Another cheap one pot rice dish is cauliflower and chickpea pilaf. I made it recently when Aldi were selling cheap caulis. And use dried chickpeas (soaked overnight) to save further pennies. I don't bother adding almonds or fresh coriander unless I happen to have some already. The quantities in the recipe below easily feed four generous portions for approx 25p per person.

4. Serve with a tomato sauce and spaghetti or potatoes

oh your all so lucky we don't have aldi at all over here I would even go once a month if it was any reasonable distance away,i remember every year going to blackpool to see friends and going to asda on way home and filling every nook and cranny with goods for Christmas we would have went end of November on boat ,we got our meat,veg etc and presents now we have asda everywhere lol hope same happens for aldi,we do hae lidls though,and BB I love your recipes and ideas so do keep posting xxxBlessed are the cracked for they are the ones that let in the light

They have quite a few in Southern Ireland, I can't understand why they haven't any in the north. Belfast would have been the first place to have one I would have thought.
At least the pound has a good exchange rate at the moment
They do have an Aldi Ireland web site, so you can check what the prices are or the offers before you go x

Kept meaning to post out of previous super 6 I got 3 cauli's and 3 bags of onion, I went with the ordinary new young carrots the 500g bags are 25p the 1kg bags are 55p. So you guessed it I got 500g x 2Why pay full price when you may get it YS0
