Well things are well n truly tight here. I run my own cleaning business and currently have had only 3 clients in the last year due to not being able to get much help with childcare, ds2 starts nursery next week and I've got two potential new clients I'm seeing this week and a quote for a third but just doing ironing once a week. I have £40 in the cupboard and luckily bills have been paid, it leaves us with hardly anything to live off for a month. I've put aside £40 in my emergency tin, this will be used amongst some of my stock? We are a family of four with a small dog n goldfish < he's got enough flakes for a month 👍
I'm quite frugal anyway so il be doing what I can to keep things low.
Ds2 is out of nappies now thank god so that helps a bit but he does wear the at night, so we've bought him tesco a own for £1.41 a pack of 20. So far so good.
Don't need cleaning stuff due to job so have a stock in the shed.
Yesterday we had a roast dinner, I made own Yorkshires and stripped the chicken had 1 breast and a half left over.
Today I used half the breast and found some farm foods puff pastry in the freezer, I turned the chicken n left over veg into mini pies using the silicone muffin tin I had, made a roux and used left over stock for the sauce, served with Yorkshires left from yesterday and chips. I used leftover filling to put at the side of the pies to fill is up.
Just had rice pudding for desert.
Tomorrow will be
Porridge or toast both served with jam.
Lunch
Chicken soup made from Sundays carcass.
Dinner
Ham pasta bake, leftover gammon in freezer from Xmas lol
Or tuna pasta bake.
Trying to delay shopping we do have a freezer of food thank god and every herb n spice known to man, but will have to go out tomorrow for staples.
Beans, gravy etc
Thinking of doing a fish finger pie? I love this thread and it's took me hours to read it. I've taken a few ideas and saved to my iPad to help me out. Thank you everyone it's gonna be a tough month.Ds2 born 3/4/12 8lbs 8.5:j

I've got a pack of mince from either Aldo or Lidl in the fridge. I'm going to try spag Bol/ chilli/ shepherds pie/ or cowboy pie? I plan to get three meals out of it as bulk out with veg n half a cup of lentils I have left or oats? I feel more at ease writing my plan out I'm not panicking so much now.Ds2 born 3/4/12 8lbs 8.5:j

Half a baguette each from a 2 pack in Aldi 39p cut in half and spread with some passata sprinkled with a few dried mixed herbs and thin slices of mozzarella ( I used half a ball) topped with 4 slices of pepperoni on each one bung in oven for 10 minutes et voila
19½p for the baguette, A couple of tablespoons of passata so approx 10p, 22p mozarella, pepperoni is 79p a pack and I used half so 39½p
Total for two large french bread pizzas 91p
You can use pasta sauce instead of passata.
Brill BB - this will be an excellent addition to fill my DS(17)
I love your idea,s and regularly 'rob' recipes.
I always have rice pudding in the fridge to 'top up' if DH and DS are still hungry - I,ve got a few fossilised rolls in the freezer, so might try bread and butter pudding too
Keep it up kiddo - we,re all loving your inputNote to self - STOP SPENDING MONEY !!

Does anyone have any easy and cheap meatball and burger recipes please?
I have 750g of beef mince in the fridge and am trying to make some meatballs, burgers and a spag bol out of it for my sons.0 -
Meatballs
Serves 4
6 tbsp milk
1 thick slice of white bread, crusts removed
500g minced beef
1 onion, finely chopped
2 tbsp finely chopped flat-leaf parsley
Olive oil, to fry
1. Pour the milk into a shallow bowl and add the bread. Leave to soak for about 10 minutes. Meanwhile, put the other ingredients, except for the oil, into a large bowl, season well, and mix with your hands until thoroughly combined.
2. Mash the bread into a milky paste with a fork and then add it to meatball mixture and mix in well. Heat 1 tbsp olive oil in a large pan over a medium-high heat and fry 1 tsp of the mixture until cooked through. Allow to cool slightly, and then taste add more seasoning if needed.
3. Using wet hands shape the mixture into balls the size of a chocolate truffle, add another 2 tbsp olive oil to the pan, and then fry the meatballs in batches until nicely caramelised all over, then turn down the heat and fry more gently until cooked through.
4. Serve with a tomato sauce and spaghetti or potatoesBlessed are the cracked for they are the ones that let in the light
