Hi Mrs Mix,
I fry some onion and crushed garlic in a little olive oil, then add a tin of tomatoes and some dried mixed herbs and/or basil and black pepper. Leave it to simmer over a low heat (stirring occasionally) until it reduces to a paste. Whiz with a hand blender and this is enough for two family sized pizza's. If you only want to make one you can freeze the remaining sauce for next time.
I find it helps to part cook the pizza's before adding the sauce and topping so that you don't end up with a soggy bottom! :eek: Just put them in the oven for about five minutes then quickly add the sauce and all the bits and pieces and return to the oven until they're done.
There are a some other threads with pizza sauces on them....but I'm too tired to search for them tonight. I'll have a look tomorrow and post the links in this thread.

Thanks for all your replies there was a reason to my asking I used to work in a pizza shop and we made gallons of the stuff every week I could remember most of the recipie and worked it out to do a much smaller amount but I couldn't get it quite right it was as if something was missing
and it was basil
so after some tweaking last night it goes
1 tin toms liquidised with
a clove of garlic
sieve into pan then add
half a tube of tom purree
1/2 tsp mixed herbs
1/4 tsp oregano
1/4 tsp basil
bring to the boil and thicken with cornflour to the right consistancy
this can be frozen but i do that before boiling and adding cornflour as it makes it go waterey but is fine to do it after

i went to tesco to get their pizza topping for my HM pizzas (lazy i know) but they havent got any
what can i use as an alternative? Tomato puree?0 -
I drain a tin of chopped tomatoes, stir in some puree and herbs. I don't use cheese on pizzas so I like a moist sauce.0

How about passata (sieved tomatoes) they tend to come out a little thicker than using canned toms and add some sundried tomato paste to it to thicken it slightly more and add a nice sweet twist. Then maybe chop some fresh tomatoes to add a nice texture. Then the world is your limit in terms of extras on top0

I use tomato puree and tinned chopped tomatoes then add some mixed herbs. Failing that ketchup is also good0

Blitz up a tin of tomatoes ina liquidiser, add some tomato puree to thicken it add herbs etc Then I sometimes add some finely chopped peppers and some spinach.

I think the secret to a great tasting tomato sauce is to cook it long enough to reduce it by about half.
I chop some onions & garlic then fry them until soft & add a can of chopped tomatoes, some mixed herbs, salt & pepper & then let it bubble for about 15 mins. I usually chuck in some sun dried tomatoes, peppers & olives too but they're not essential.
HM pizza is one of our favourite dinners especially with my HM ciabatta.:rotfl:0 -
