Just a quick update to say that my pizza was a huge success, thank you for your tips. I cooked up tin toms, sqeeze of puree an sprinkling of italian herbs, an a bit of sugar! then whizzed it all in processor till smooth. perfect.....
Pizza base was HM in BM, and for lunch I had eaten HM potato soup with HM french bread.........what an os day

How do you make the tomato topping for pizza, I've made it before and remember chopped tomatoes and onion, but can't remember anything elseYou're only young once, but you can be immature forever0 -
I usually soften the onion then add the chopped tomatoes and simmer to reduce. I then add a bit of tomato puree and a tiny pinch of sugar. Leave it until it's quite thick then it won't make the base go soggy.0

I drain a tin of chopped tomatoes and mix in some tomato puree and herbs. It's not a real pizza for me unless it has anchovies on it.0

Hi hollydays,
I fry onion in a little olive oil add some garlic and basil and any other herbs I fancy then add a tin of chopped tomatoes. Simmer it gently for about half an hour until the sauce reduces and thickens. Then blitz with a stick blender. This is enough to cover two large pizza's, but if you're only doing one, it freezes well.
There's an older thread with lots of recipes for pizza topping so I've added your thread to it to keep all the suggestions together.

Also- I am going to roast some veg now after reading the threads-did i read that you can also roast tinned plum tomatoes to enhance the flavour?or did i imagine that? what sort of temperature would you roast them on( I am about to roast some red onions and courgettes in another dish too?)0
