Hi i want to freeze some potatoes that wont last much longer if they are not used. I want to peel them and put them in freezer bags to use for roasting and mashing is this the best way to freeze them.

Personally I would part roast them and then freeze. I don't think you can freeze them raw. I don't know what you could do for mashed pots though. I suspect you can freeze mash because you can freeze shephards pie with potatoe on top, but I doubt potatoes on their own freeze very well.0

Hi all
I'd like to freeze some roast potatoes for later cooking from frozen.
I was thinking that I would par boil them (as I normally do), and then roast (or shallow fry?) them for maybe 10 or 15 mins to sort of coat the outside, then freeze them.
I was also thinking that I would then be able to roast them straight from the freezer by putting them in a hot oven, in peheated oil, for about 30 mins or so.
Does this sound right?

I do this all the time as it really takes the hastle out of timing them to be ready at the same time as the meat and vegetables.
I cook the potatoes in batches and then freeze them in family sized portions. I cook them less than I normally would...until they're just beginning to colour then cool quickly and freeze. When I want to use them I take them straight from the freezer and give them 20-25 minutes in a hot oven to crisp them up again. I have tried defrosting them first but I think they're crispier if reheated from frozen.

Thanks for that Pink. Do you turn them over as part of your cooking-them-until-they-are -just coloured? Or do you just "do one side"? Hope that makes sense.0

Yes I give them a good shake a couple of times while they're cooking to turn them.

I have just tried freezing roasties for the first time and did it according to a very old freezer book's instructions. I blanched them and then froze them, and when I wanted to cook them I put them into the heated oil from frozen. It's a bit similar to Delia's method for cooking roasties and worked fine for me, which was good as my veg garden was a bit of a disaster this year and I had to dig up loads of tates that weren't ready to store.0
