Here's a great easy recipe that uses potatoes.

Traditional Scottish 'stovies'...I don't know what southerners would call it...hotpot maybe

I once made a lovely stew with lots of potatoes and put it in the freezer. When I took it out of the freezer, the spuds were like soggy sponges. Horrible. Would love to know if they do freeze as mash, roasties etc as I use loads of spuds and this would be really handy.

    Hi kitty,

They do freeze well as roasties. I usually batch cook them for the freezer then cook from frozen when I want them.

You can freeze mash but I don't do that very often. There's a thread about it here: Freezing Mashed Potato

Impomdasp, There's a long thread here that may help: Help! How do I store potatoes?

Pink, how do you batch cook the roasties? Do you mean you par boil then freeze, or do you part roast? I'm famous for my roasties, but always do them fresh, would love to have some in the freezer, for a slightly easier life!

    Hi Churchmouse,

Make them as you normally would but cook them a bit less so they are just beginning to colour.

Try to open freeze as it stops them clumping together before bagging into family sized portions. When you want to use them cook them from frozen and give them 20-25 minutes in a hot oven to crisp them up again.

It really does take the hassle out of timing them to be ready at the same time as the meat and veg and they taste just as good.

:D Oh joy! Thanks Pink, that's exactly the answer I was hoping for!

Tomorrow will see me roasting a whole bag of potatoes. This will certainly make life a lot easier.

  • I got a load of potatoes reduced last night in Tesco, 20p a bag of king edwards.

What I need though is ideas of what to do with them, but ideas that can be frozen.

This way I can use them before they go off and freeze them. Usually I make up batches of Mash and freeze it, but would like to do something else with them aswell so we are not eating mash for the next few mths :rotfl:

    Anyone help is much appreciated.

    Thanks

This is what I do when I have extra potatoes, I use a large roasting tin, in it I put thinly sliced potatoes & some thinly sliced onion, add salt & pepper, garlic, herbs to taste, cover with milk (I use milk & water mixed together)
Put it in the oven to cook, for 45 mins to an hour, till it's brown & crunchy on top. When it's cool, I cut it into portions & freeze, if you want to make a posh version use cream instead of milk.
