Freezing potatoes

I freeze any left over raw potatoes. I blanch mine this way, peel and then quarter the potatoes, boil a pan of water, drop the spuds in, boil for 2 minutes, take spuds out and drop them in a bowl of ice cold water, leave for 2 mins. Take them out, dry them and then open freeze them on baking tray, as ChocClare describes above, then put them in suitable freezer bags and back into freezer. I find that new potatoes freeze well too.

I have frozen mash sucessfully. When I was microwaving it later, I thought at first we were going to have potato soup with our sausages! It sorted itself out with a good long burst of nuking though. I did find it tasted a bit drier/flourier than the original mash, but added a good dollop of Hellmans (OH won't eat other mayo) and that did it the world of good.Trust me - I'm NOT a doctor!0

I'm very new to old style ways. I have some baking potatoes that I will not use this week. Can I cut them into wedges and put them in the freezer?

Not sure about freezing, but if you just leave them in the fridge they will keep for weeks and weeks, but don't cut them leave them whole.:hello:0

No they will go black and lose texture
par boil them so they are 60% cooked and then freezegarth;)0 -
I have potatoes in the shed that I dug up in August. If you freeze raw spuds you may as well throw them away - they will be no use to anyone.
Potatoes can last months if kept properly.0 -

Make sure you take them out of any plastic bags as soon as you can when you buy potatoes, we keep spuds in a box in the garage with a thick layer of newspaper to keep out the light and stop them freezing in the cold winter conditions.0
