All I do is mix flour (plain or self raising - whatever I have open) and water. Sometimes I add herbs/flour - it depends what they are being eaten with and sometimes some oil/butter.
I don't bother with kneading, yeast or leaving it to rise and they always turn out delicious!
Flour + water + rolling out + dry frying = flatbread0 -

As they're so cheap to make - I've started serving them with nearly everything lol
Made some garlic and herb ones to bulk out a pasta bake this evening, and they were totally delish and so simple!
What I do it this:
200g flour (I've found any will do)
100ml water
herbs of choice
Mix herbs with flour, add water and mix until a firm dough.
split dough in 6 portions and roll very, very thinly.
Fry in a hot, dry frying pan until browned on both side (this only takes a minute)
Done! Tonight I added some garlic butter to go with the pasta bake, but quite frankly you can so what you like:)
They cost pittance, well almost, as 1.5kg flour costs about 52p.
200g gives me 6 breads, so, I get 45 out of a bag of flour making them 1.15 pence each

How do you stop them sticking? I tried making chapatis recently but just ended up with a really burnt pan - any tips gratefully received as the chapatis were great but the time spent with a brillo pad wasn't ...0

Mine didn't stick at all - I used a stainless steel pan, with no teflon type coating. There are some black stains on the pan, but I normally leave it in water overnight (I'm lazy that way) and it just comes off in the a.m.
