I am sorry folks, I know you must get fed up of these expiry date questions.
I picked up a couple of bargain chickens at Lidl discounted as they expired on 23 Feb. I cooked them on Friday, have now eaten/frozen the meat but today used the carcasses to make bone broth in my pressure cooker. It has just occured to me that the carcasses were 2 days past the expiry date. While I do not want to poison myself I am loath to throw it away after having used the effort and leccy to make it.
Considering it has been boiled to death under pressure do you think it will be ok in the fridge for a couple of days? It tastes fine...

Once it's cooked you have 3 days to use anything thats been refrigerated, so day 2 is fine. The use by date is voided once you've cooked it lol0

Phew, thanks. I have cooled it and put it in the fridge. Tomorrow I will try to shoe horn some into the freezer.

Hi Slinky--just wanted to chime in and say that if you're struggling for freezer space you can reduce your broths/stocks before freezing and then add water when you defrost. It helps save space and takes less time to defrost that way.:j0

I bought some lamb steaks on Friday but stupidly forgot to check the date and whether to put in the freezer or not when I got home. The date on the packet is the 2nd and the lamb has started to turn brown. Is this going to be safe or should I just accept that I've wasted my money?!

We can't tell you whether it's safe.
The meat has turned brown due to oxidation, and doesn't necessarily mean the meat isn't safe to eat.
Is the date of the 2nd the Use by date?
Personally, I probably wouldn't risk eating meat past the Use by date, (although I might be less strict with lamb than I would be with, say, chicken). If you do choose to eat it cook it ASAP, smell it carefully and cook it thoroughly. Be aware that just because the meat doesn't smell rancid, doesn't mean it's safe to eat.NSD May 1/150
