    I made coconut rice pudding a couple of weeks ago and it was absolutely delicious. I did it in my slow cooker and it was so easy. There is a link here somewhere but should come up on a search of the threads.

    Edited to add I used pudding rice from Asda. I think it was in the usual rice aisle...

    This thread has given me an idea now. I'm going to make a rice pudding once I've finished the massive Apple & Pear crumble I made last week.

    Me too. In my Tesco it's with the jelly, flaked rice and tinned rice pudding.

    BTW as someone said you can use risotto rice for a rice pud, but you can also make risotto with pudding rice ;)

    You get pudding rice from the desserts section in supermarkets usually - you know jellies, angel delight, flan cases etc - that sort of aisle. I make mine with a tin of evap milk made up to 1 pint, that makes it really creamy and gooey!

    If you're feeling really naughty, you can use some condensed milk added to carnation milk when you cook it then serve it with the rest of the carnation milk. If I want to make it faster I boil up the pudding rice first (in water), drain then add a little butter and carnation / condensed milk and finish it off in the oven.

    I always add brown sugar and a quick grate of nutmeg. I'm loving the evaporated and condensed milk suggestions too. :drool:

    I also always cook mine with foil over - can't bear skin. :o

    I LOVE the skin! Especially if there are some burnt bits to add to it too.

    Tried the coconut milk rice pudding late last year and it was so yummy it all got eaten at one sitting - no wonder the hips can't shift any weight.

    Oh no!!!!! Now I'm craving rice pudding with stewed apples!!!!

    When I make it I use full cream milk, add a small tin of carnation (or own brand evap) and an ounce of butter, makes it really creamy and gives it a lovely brown skin.

    Of course it has to be served with a big dollop of stewed bramley apple! YUM!

    Bexxie - is it a big tin of evaporated milk you use??? So strange I was in tesco earlier today and picked up a tin of the milk and a packet of the pudding rice, was going to do mine in the slow cooker though.

    Rice pud is also nice with stewed rhurbarb on top (which is in season now).
