    I made a mushroom bruschetta with some old mushrooms, red onion and some wholemeal toast, yum!
  • I had a brie and cranberry sarnie, which was delicious, but my current favourite lunch is jacket sweet potatoes, baked in quantity on Monday and reheated in the microwave on subsequent days. Great as you don't need any butter, although they're best served with a dollop of cream cheese and lots of black pepper. Yum- diddly scrumptious!
    They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm. :grin:
  • The kids and I had HM Bread with soft cheese with Herbs and garlic in
    Hubby had HM soup and seeded bread as well and some hm Bread Pudding

    I love this thread I often strugle with what to make for lunch. This week I have made a Parsnip soup but I needed to add flour and it was in oz I was making it in grams in a hurry I put 370g in it was only meant to be 20g in a panic I put in lots of water followed by oats and lentils :( I am not sure what it's going to taste like but we are going to eat it I hate waste.

    should really contribibute to my own thread.
    today i had a muffin with left off scrags of chicken, cheese and spring onion. toasted in the george forman, wrapped in baking parchment, so no washing up when the cheese runs out.
    when done i opened it up and put in rocket and some cranberry sauce. lovely.
    Opinion on everything, knowledge of nothing.

    For lunch today I had homemade cauliflower & nut quiche, bit of salad (toms, cucumber, scallions, 1/2 avocado, olives and a couple of radishes) homemade wheaten bread, a banana & two clementines. Tomorrow it will be homemade bean salad plus tomato, a tin of mackeral, wheaten bread followed by banana & clementines. Wednesday will be the same except homemade lentil quiche instead of the fish. Thursday will be the same as Tuesday. Lastly Friday will be homemade Mexican bean soup and fruit. Hopefully on Thursday night I'll remember to make some more wheaten bread.

    I had half a tin of tuna from granddaughters breakfast yesterday (honestly!) and some sweetcorn from Grandsons elevenses today - so chopped a couple of spring onions which were wilting in the fridge and added mayo. made some potato wedges and voila! lunch!
