Well done Beki88 on your butter. Like how you approached it experimenting with methods. I recommend the whisk. The second attempt is lighter so has more buttermilk in it and will spoil more quickly. (Will taste gorgeous though!)
The first attempt looks perfect.

I got my 7lbs in the freezer in 210g portions ready to make the Mary Berry fruit cake bags I got for £1, need to make 1 soon for o/h birthday in feb0 -
