    Are you toasting them for long enough? I used to have this problem, leave them in for slightly longer and they are easier to split with a sharp knife.

    Toasting them lightly is the best idea or heat them in a warm oven if you've been using it to cook the filling. The result is the same puffing up which lets you slit them without trouble.

  • I put mine in the microwave for 15 secs and find the edge with a ridged edge n cut there its easier when warmed up and I prefer hem warm.

  • I am toasting them till they puff up. I then try to make a pocket but I either can't manage to get the right 'split', or I split it but manage to tear it when I am filling them up!

    I only want to put some salad and a few falafel inside!
  • I do the same as Eyebright - cut them across the middle to make two deep pockets. We had really good ones the other night - Asda's Chosen by You flame baked pockets. They were soft and puffed up nicely.

    Run them under the cold tap, shake them to remove excess water, before popping them under a hot grill.

    I always had this problem but then I tried M&S pitta's and have no trouble splitting them at all. Buy a few packs at a time then bung them in the freezer.

    I always use scissors to open them - there's usually a little hole along one of the 'seams' and so i put the end of the scissors in and cut and usually they open perfectly - if they don't open then I put the blade of the scissors in and then gently pull apart.

    Like Jil I run them under the tap quickly and then then grill, I think this makes them more pliable and less flaky, also they don't break up so much when stuffed.
