I do a combination of what has been said. Sprinkle with water, micro for a few seconds, then cut them in half into 2 sort of semi circular shapes before filling.
To be honest though most cheap pittas are just that, cheap, and far too dry, hence the difficulty with keeping them whole. BE CAREFUL when cutting open the pittas after toasting/ microwaving, the steam that comes out easily burns hands, leave for a few moments to cool. I like to put marg/cheese in so its goes melted and soft, then its really tasty later cold0

We always landed up cutting through the pitta but this has made a big difference.

Pitta really are the bain of my life and although I really want to use them as a change to slices of bread or buns but every time I just end up messing them up!
I will try and let you know tomorrow how I get on as I cheated again and bought cheese topped bums hahahaa

We just stick them in the toaster from frozen. Perfect every time.0

I use scissors rather than a knife, straight from the freezer into the toaster or micro. If I want to make the whole pitta into a pocket (donner kebab stylee) I cut a thin strip off one of the long sides rather than splitting it - seems to form the pocket easier. HTH0

I use scissors too. Cut along the top, turn the scissors the other way, open them, then ease the pouch open. I end up with pitta debris if I do it any other way."Who’s that tripping over my bridge?" roared the Troll.

Score halfway through along one side of the pitta, about 1 cm from the edge, pop in the toaster, cut side down. It will then easily open for filling.0
