Sprinkle with a little water and nuke in micro for a few seconds until they puff up and go soft.
Cut a slit along the side with a very sharp knife and open up the steamy pouch with your fingers.
And - as far as rants go that was pretty tame:D

What a fantastic question and answers - pitta bread are the bain of my life. They're often YS's at the supermarkets, I bung them in the freezer, get them out and finish up with a pile of pitta pieces . Hope this tip works when they've been frozen too!!

From frozen you can pop them right in the toaster and you end up with a big puffed out warm and slightly toasted pita. Cut it in half and you get two pockets.
i was really confused by this thread because i never have an issue but i now relise thats cause i grill them, so i do one side at a time then cut themDEC GC £463.67/£450

If you cut them in half vertically rather than horizontally you may find this easier. They will of course be smaller , but it would save you trying to cut open the "top" part . I do not have the dexterity or patience to cut them horizontally , as there would just be a pile of debris .:AToo fat to be Felicity Kendal , but aim for a bit more of the good life :A0

I read a tip on here (sorry to the person who posted it, I really can't remember who it was) - if you cut two small slits, then blow into one of them (carefully as a lot of steam will come out) this will help push the two sides apart. You can then cut as desired.
We always landed up cutting through the pitta but this has made a big difference.0
